Whether the Eunuch was a gay man or just a man who could control himself around women is not stated here. I don't know if he was castrated either. The point is... this was a non-procreation creature... and he stated he Believed Jesus to be the Messiah, and Philip baptized him. Then the Holy Spirit came to the Eunuch.

Also... Jesus said sex is not a big deal in Heaven. That's why there is no need for marriage in Heaven. Jesus talked about that. Sex is an earth thing.... so, we could multiply.... the desire to procreate was not in this man... and Jesus sent the Holy Spirit to him anyway.

AND then Philip was supernaturally transported to a completely different town.

Agreed. For persons attracted to the same sex, everything I have ever observed is, they are born that way.
"Born that way" however does not exclusively imply genetic - latent genes can be "triggered" by other factors AFTER one is born.

As several gay people I know have said "WHY would I choose this? Wouldn't it be easier for me if I wasn't?".

I can only conclude that they are born that way - gay people do exhibit slight differences in the brain at young ages.
