I am making my first ham. And I peeled off the paper and there was all this leathery skin!!!!

But how do I deal with the SKIN!!!! Yuck. Damn. Creeping me out.

Cook it with the rest. The Filipinos call it "Lichone" , the Chinese serve it with fried rice , and I think elsewhere you can buy the dried product as either "pork rinds" or chichirones. Beelieve me, its tasty.

Well, Hubby came home and trimmed it and rolled his eyes at me.

Wow, you've got a good man there! I remember the first time I went to cook trout almondine. When I took the fish out of the package to rinse it, the feel of the scales creeped me out and I dropped it into the sink. I tried again to pick it up but couldn't. I went outside to my boyfriend and told him, "The feel of the scales on the fish are creeping me out. It feels like a fish." He said, "So, what'd'ya want me to do about it?" I figured he really didn't want to hear that I wanted him to come in and take care of it so I just bit the bullet and did it. I empoyed tactics similar to when I cooked my first chicken [thighs], which creeped me out because I could feel the muscles and it just made me think of how it was an animals flesh. I just kept telling myself that it had to be done if I wanted to eat, and that millions upon millions of people do it everyday with no problems. lol. I had no idea there is a skin on a ham, I've never cooked one. It would creep me out too.
