On Sunday, I made my own version of "Unstuffed Cabbage Soup" and Vrai's recipe for Cabbage Soup.

2 Lbs. ground beef
1 Lg. onion
1 Lg. can diced tomatoes
1 bottle V-8 Spicy (I used low sodium, but the soup definitely needed salt when I was done, and I don't use a lot of salt)
1 Lg head of cabbage
1 Lg can of corn (you can use frozen, I just had this left from another recipe I made over the holidays)

Brown the ground beef with onion & minced garlic. Add the V-8 juice, and then the cabbage. Cover & let cabbage cook down a bit, then add the rest of the ingredients. Simmer until the cabbage is fully cooked.

Made this Sunday for Monday's dinner (I had a meeting to go to, and wanted to have a fast dinner). I bought Ciabatta bread & a Jalapeno Focaccia bread to serve with it. :yum:

So far, it's served 4 for dinner (with 2nds)and lunch X2 for 3 people. (I took some for lunch yesterday, too) We still have soup left!

Soup for all my meals since it was made ('cept breakfast), and lovin it!

This soup really surprised me, as I'm not all that excited about corn anything - but I really loved this. I'd love to make this about once a month.

Smokey Corn Chowder

8 ounces sliced bacon, cut into 1/2-inch pieces
1 large sweet onion, chopped
2 cloves garlic, finely chopped
1/2 teaspoon smoked paprika
1/4 teaspoon crushed red pepper
2 10-ounce packages frozen corn
3 cups chicken or vegetable broth
1 cup half-and-half
kosher salt and black pepper
4 scallions, thinly sliced on the diagonal
1 baguete, sliced and toasted (optional)
Directions
1.Cook the bacon in a large saucepan or Dutch oven over medium heat until crisp, 5 to 6 minutes. Transfer to a paper towel.
2.Spoon off and discard all but 2 tablespoons of the drippings. Return the pan to medium heat. Add the onion and cook, stirring occasionally, until soft, 5 to 7 minutes.
3.Add the garlic, paprika, and red pepper and cook, stirring, for 2 minutes.
4.Stir in the corn, broth, and half-and-half and bring to a boil. Reduce heat and simmer for 15 minutes.
5.Transfer half the soup to a blender and puree until smooth. Return to the pot and stir in ½ teaspoon each salt and pepper. (I use my hand held blender stick)
6.Divide the soup among bowls and top with the scallions and bacon. Serve with bread, if desired
