Kombucha Tea

Hi everybody! I had made a few posts in a different forum on kombucha tea, but I'm moving the discussion over here into Food And Nutrition, where I believe it's more appropriate.

I drink K-tea for the benefits I see in my skin. I brew it at home, because I found it was too expensive to buy all the time. If you need a SCOBY or you're interested in tasting a bottle of my local brew, let me know. Otherwise, if you're just interested in tasting it, I recommend buying a bottle or two at Country Nutrition in Old Line Center. I've also found it at Safeway, but not in every store.

We are about to start making our own kombucha soon. We have someone giving us a SCOBY. We already make our own water kefir, and we LOVE IT. It took us a while to get our formula correct, but once we got it, we ALL drink it.

How long did it take you to get your kombucha correct?

Do you eat SPAM when you drink your tea?

I don't sell the tea, nor am I a producer. Strictly home use, for my skin. But I'll allow you to have ONE bottle to taste, if you're seriously interested.

My latest batch: organic apple and crystallized ginger. It's good now, but I'll have to see how it tastes in a couple days.

I watched a lot of YouTube videos before I even attempted it the first time. So I've never really had a "bad" batch. So far, I've been brewing for about 5 months without a contaminated (fuzzy) batch, and they've all been somewhat good tasting (exceptions: blackberry and acai. Too tart!).

Hi everyone! Hope you're having a superb summer.

I read a helpful web article this morning, that describes what to look for as you're brewing K-Tea. I learned a lot from it too (for instance, I thought the tea got lighter as it brewed, but this article confirmed my observation).

Flavoring your K-Tea

I've brewed about a gallon a week since early this year, and I try to add a little something different to each batch when I flavor my kombucha. Here are some of the juices I've tried, and my subjective report on their flavors (the juice is added after the primary fermentation period has finished, as I move the tea from the large jar to bottles):

Mango - always delicious
Apple - a bit bland, also doesn't seem to be as fizzy as other batches
Pineapple - Good
Peach - My favorite
Berry - OK, but a bit tart
Blackberry - too tart for my liking
Acai - Way too tart

I try to use organic juices for all my kombucha batches, and I stay away from the "cocktail" drinks, which typically contain high-fructose corn syrup.

I also enjoy putting crystallized ginger into most of my batches (my wife doesn't care for ginger, so I'm brewing one batch with and one batch without, etc.). Ginger can be added to any of the above flavors.

Now that cherries are in season, I've also begun adding a whole (split to remove the pit) cherry to each bottle. Really adds some great flavor and color.

Last night's batch? Mango Nectar (no ginger)!

I accidentally made some of this over the weekend. Someone left the jug of sweet tea out of the 'fridge over two nights, when I dumped it down the sink it had a thick skim on the top, and was bubbling.

Looked yucky, and I wouldn't have considered tasting it.

Sliced plum

I just finished bottling my latest batch, this time using the fruit we had in the fridge. I sliced up a fresh plum, and placed a couple slices in each kombucha bottle. Within the first couple hours, the tea has already begun taking on a nice rosy hue*.

My wife has also begun to drink the K-Tea in the past couple weeks, so hopefully she'll be able to wean herself off soda as well.

* Important: Kombucha will quickly leach the color and flavor of any fruit, such as my plum's dark skin, because of it's acid and pH levels. It's for this reason that your Kombucha must be stored in containers that will not leach. Avoid metal or plastic. If you're thinking of homebrewing, start saving the glass bottles from your commercial kombucha (such as G.T.'s).
