I favor chicken breasts. I think my favorite way of cooking boneless chicken breast is to pan steam it (put the naked breast in a frying pan on medium-high with a drizzle of olive oil and cover with a lid. This cooks the chicken and eliminates some of the excess moisture from the meat. Flip the chicken over occasionally. Once the chicken near done I remove the lid to get rid of the accumulated liquid. I then cover the chicken with a brown sugar/mesquite barbeque sauce and stir it about until the sauce thickens and browns a bit. This can be served over long grain rice veggie mix. Or sometimes I cut it up and throw it in a salad thus eliminating the need for salad dressing.

I make a mean apple crisp too which really tops that meal off...:ohwell: but no one in my family eats it but me so I never get to make it...:ohwell:

:yum: One of my all time favorites! :clap: Make it and bring it to work. I guarantee it will be vacuumed up. :lmao:

Southern Maryland Crab Cakes

2 pounds fresh crabmeat
2 eggs
½ cup bread crumbs
1 tablespoon Old Bay seasoning
2 tablespoons minced fresh parley
2 teaspoons Worcestershire sauce
1 teaspoon dry mustard
¼ teaspoon tabasco sauce
2 teaspoons baking powder
3 tablespoons mayonnaise
Saltine cracker crumbs

Mix all the ingredients (except crabmeat) together in a bowl. Add crabmeat and mix gently. Form into cakes and coat in cracker crumbs. Broil or fry until golden brown. They also freeze well.

Makes 1 dozen.

Can you just buy lump crab meat at the grocery store or something, or do you have to pick them? :confused:

Either works. I like fresh picked, but if you get quality crab meat from the grocery store, you can't really tell the difference.
