Meat Marinade and Grills

I put absolutely no marinates or seasonings on beef when grilling. Maybe some pepper but that is about it. As for pork chops I marinate it over night (no piercing the meat though) in:

1 cup apple cider vinegar
1 cup lemon juice
1 cup oil
1/2 cup soy sauce

Melts in your mouth. :yum:

I believe "Kom 526" posted a reference to letting your meat rest.

When you cook a piece of meat, the muscle fibers that are in closest contact with the heat contract. As the fibres contract, the juices get squeezed away from the source of the heat. When you cook the meat on both sides, all the juices leave the edges of the meat and concentrate in the center.

Let cool/rest on a plate for 10 to 20 minutes depending on the size. The juices will then re-distribute. :nerd:

One ingredient stumped me: ponzu (citrus seasoned soy sauce). Anybody ever hear of it or know where to get it?

If you're in St. Mary's, there's an asian grocery on Rt. 5 in Great Mills. They have a huge selection and I'm sure they have ponzu.

Actually, I'm only a couple of miles from there. I'll check it out and see if they carry it. Thanks!

Very welcome. Did you happen to see the BBQ special where they cut beef ribs into individual pieces and then flour, egg wash, flour and DEEP FRY them? They were then dipping the fried ribs in BBQ sauce. As if we need to add a few more calories to ribs, but damn does it sound good!

:confused: If you wanna taste cow, why bother carving it up into steaks? Just stick a pole through it's :gossip: and out it's mouth and stick it over a fire.

I'm picky about my steak cuts (I only eat filet's or ribeyes), but I like them lightly marinated with something. My latest favorite is John Boy and Billy Sauce, or as I call it, "Billy Bob Sauce". :yum::yum: I think John Boy and Billy are two local radio dudes down here who came up with it. It's great on chicken and pork; haven't tried it on steaks yet, but the b/f said he had it on steak and it was great. :yay:

Yes, I did. It did sound delicious but it seemed like a waste of good beef. :lol:

It often seems that when a recipe sounds like a bit too much, it is. But, man did those people eating them look like they were in hog heaven. I'm not sure I'd make it myself, but I'd sure stop in a grab some if they were nearby.
