I've already got chicken wings in the oven for the football games at 1. Then meatloaf for dinner, thinking it will be a late dinner.

After my trip to the transfer station I stopped at Giant and picked up the meatloaf mix and a few other items. It is in the oven and smells OH SO GOOD! 30 more minutes and I'll be digging in. :drool:

I will never understand the practice of adding sugar to every recipe. It is the biggest cook's crutch ever. You can make a dog turd tasty with enough sugar. 3/4 cup ketchup= 41 grams of sugar. 1/3 cup brown sugar=47 grams of sugar. I want meatloaf to taste like "MEAT" with onions, peppers, mushrooms, herbs spices and seasoning, not a meatloaf shaped "TWINKIE":buddies:

I put a little sugar in my spaghetti sauce, cuts down on the acid. I also put a little powdered sugar in the breadcrumbs when I make chicken tenders, gives them a little sweet flavor like chick fil a.

It just seems like every recipe found nowadays for anything from Cole Slaw, to Marinara sauce, sugar is the second or third ingredient.

Some foods are supposed to have savory, spicy, or earthy flavors.

It is an homage to the Chik-Fil-Afication, or McDonaldization of our national cuisine that all foods need to be above all else Salty and/or Sweet.

This started way back with early canned food and has moved up to higher end restaurants with the slathering of salt, butter, and sugar on any available surface, simply because the human brain at some primordial level responds favorably to these easy tricks.

Talk to your Momma's and Grandma's and see how sparsely these ingredients were used in the foods we all fondly remember. Anyone can pour Maple syrup or Honey on something to make it taste good. :buddies:

My favorite part of meat loaf, day after sandwiches cut the meat loaf very thin, toasted rye bread, mustard, and nuke the meat loaf with cheddar cheese on them and a cold beer to chase it down. Nummers.

Don't let the source of this recipe fool you, it actually tastes pretty good.

Meatloaf Recipe


Ingredients
1 spray(s) cooking spray
1 1/2 pound(s) uncooked 93% lean ground beef
1 cup(s) uncooked rolled oats
1 medium uncooked onion(s), finely chopped
1/2 tsp garlic powder
4 oz canned green chili peppers, mild or spicy, diced
1 large egg(s)
1 Tbsp chili powder
2 tsp ground cumin
8 oz canned tomato sauce, divided
Instructions
Preheat oven to 375°F. Coat a loaf pan with cooking spray.

Combine all ingredients, except half of tomato sauce, in a large mixing bowl; set remaining tomato sauce aside. Spoon meatloaf mixture into prepared pan and smooth top.

Bake for 60 minutes; spoon remaining sauce over meatloaf and cook 5 minutes more. Slice into eight pieces. Yields 1 piece per serving.

I like mine a bit moist, and sometimes the mix with pork/veal isn't enough. I've found adding some tomato juice to the mix adds moisture without changing the flavor much at all, especially if you use a recipe with ketchup.

The best thing I've ever bought is the Perfect Meatloaf Pan. Meatloaf is moist but now swimming in grease. Plus with the insert, you just lift it out.

I've seen those pans, wasn't sure about them. I usually use a Pyrex loaf dish but leave an inch or so at one end for the grease.

Those 2 piece pans (insert with holes) are really good for meatloaf or other things that need to be elevated.

I used to have one of those. Now I have to wonder what ever happened to it.

The pan does work great, the insert keeps it up off the bottom and that's where all the grease ends up, easy clean up too.
