High pressure cutout

This is only a guess, but I think the high pressure switch might be the problem. You could try a simple test by leaving a window partially open while it is cold in the car on a hot day.

If this proves that the AC does not shut off, you could reduce the refrigerant to reduce the high pressure.

This can be done in the driveway; but you knew that. Like Centreville said; but you can also set the A/C on high at the coldest setting, but leave the windows closed; the stationary approach; and listen for the compressor to cycle in-n-out.
If your vehicle has a recirculation botton, set it to draw outside air, as the compressor has to cool that air, then disengage when the set temp. is reached.

Lot of things it could be. You need a professional refrigerant technician to find it. Off top of my head could be moisture turning to ice inside the expansion device. (ever had system open before~ie replace a part?).

Take it to Redgate Auto Air.

What the hell is that ??.... I thought they were called mechanics....Silly me,,
