Need a quick eggplant recipe.

Anyone have a good eggplant recipe that's fast to make?

I've never had it, and have two eggplants that need to get cooked up before they go bad. I'm afraid they MAY already spoiled. Picked on SAturday, kept in cool garage. They look good, and feel pretty firm still.

Anyhow, any good fast recipe's for me to try?

Do you have eggs and cornmeal on hands?

If so, try this:

1. Put oil in the skillet to heat up on Medium heat to fry the eggplants.
2. Peel the eggplants.
3. Slice the eggplant into 1/2 inch thick
4. Dip the eggplant in the egg
5. Dip the eggplant into the cornmeal
6. Fry it until it is golden brown on both sides

Remove the eggplants onto the plate with paper towel to drain oil/grease. Add salt and/or pepper for taste.

INGREDIENTS (Nutrition)
2 tablespoons olive oil
3 cloves garlic, minced
2 teaspoons dried parsley
1 eggplant, cut into 1/2 inch cubes
salt to taste
1 cup grated Parmesan cheese
2 zucchini, sliced
1 large onion, sliced into rings
2 cups sliced fresh mushrooms
1 green bell pepper, sliced
2 large tomatoes, chopped




DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 1 1/2 quart casserole dish with 1 tablespoon olive oil.
Heat remaining 1 tablespoon olive oil in a medium skillet over medium heat. Saute garlic until lightly browned. Mix in parsley and eggplant. Saute until eggplant is soft, about 10 minutes. Season with salt to taste.
Spread eggplant mixture evenly across bottom of prepared casserole dish. Sprinkle with a few tablespoons of Parmesan cheese. Spread zucchini in an even layer over top. Lightly salt and sprinkle with a little more cheese. Continue layering in this fashion, with onion, mushrooms, bell pepper, and tomatoes, covering each layer with a sprinkling of salt and cheese.
Bake in preheated oven for 45 minutes.

I REALLY wanna try eggplant parmesian. Found a couple of recipe's that sounded good, I just don't want to be up till 10pm cooking it. Baby is kickin my azz...I'm beat.

Don't rush. If the eggplant was picked Saturday and looks good/is firm, you have time. Fix your parmesan tomorrow or the next day.

Oh, and if you fry it, use cornmeal, NOT flour.

I have fresh garden grown tomatoes, garlic and onion fresh from my Dad's garden...same place the eggplant came from. :yum:


Got about 10 lbs of drywall dust from your garden sitting on the bathroom floor. Want some of that to sprinkle on them? :lmao:
