I'm on a stuffing kick - as in stuffed chicken breasts, rolled flank steak, etc. Not bread stuffing but like artichoke hearts, sundried tomatoes, mushrooms, cheese, spinach, etc. Little low carb meals in a bundle.

What are some other ideas? I saw some guy on TV making a stuffed grilled ribeye with mushrooms and gorgonzola. Looked really good but I fear my skillz are incompatible and cheese would run out all over the place.

Use toothpicks or twine to hold it together when cooking.

I like chicken breasts stuffed with goat cheese and wilted spinach, but that's not very imaginative. :lol: I've also been meaning to try this recipe for chicken rollatini with prosciutto and cheese.

I like to stuff chicken breasts with buffalo chicken dip ..the cream cheese buffalo sauce combo..and bake. Its a favorite among my low carb friends. I also stuff meatloaf with sauteed worsteshire mushrooms, spinach and cheese. Other chicken stuffings I've done..cordon blu, bacon and gorgonzola, prosciutto and mozzerella with tomato sauce, pepperoni and pizza sauce w/mozz, cheese and jalepenos, and I think sometime this week I'm gonna try something with ham and pineapple..

I can't find the recipe but I do remember the recipe.

I need to make it again.

2 lbs lean ground beef

1/2 cup breadcrumbs of choice

Italian seasonings to taste

salt/pepper to taste

2 eggs

Prosciutto

Provolone

Fresh baby spinach

Mix the first five ingredients together and then place on a large surface sandwiched between wax paper. I use a rolling pin to make a large rectangle of what is technically meatloaf.

Remove the top piece of wax paper and layer the meat with the prosciutto, cheese and spinach.

Use the lower layer of wax paper to roll the meat into a snug loaf over the fillings and pinch the sides.

Slide the loaf onto a nonstick baking pan.

Roast at *425 for about 30 minutes. Check with meat thermometer depending on your preferences.

I've used pepperoni/mozzarella/bell peppers and different variations.

I just did them with wilted spinach, chopped black olives, artichoke hearts, sundried tomatoes and feta. Rolled the mixture up in a slice of salami and a slice of provolone and they're going in the oven here in a few. The mixture was really good all by itself. :yum:

This is just a roll-up but it was a solution to having steaks which were too thin to grill out. I had some 3/8" thick steaks and wanted to grill them, so I decided to spice them as I would the thick ones. Then I laid strips of uncooked bacon on top of the spices, cut the steaks to match the outline of the bacon, then rolled them up and held them closed with wire turkey skewers. I grilled them on a gas grill as opposed to charcoal, because the heat is lower and easier to control. I grilled them on end, although I suspect it doesn't matter. The result was tender, juicy, and flavorful.

BTW, the chicken breasts were outstanding!

Pork chops stuffed with diced apples and prunes.....yes I said prunes. Its delicious, if I can find the recipe, I'll post it.

Chicken Kiev is one of my favs. Lots of butter though. I guess you could add some veggies if you want. Or just have them on the side.
