So you're saying they over did it.. I was wondering maybe not done correctly.

Basically yes. Its hard to say where they went wrong without knowing their process. Lets say they used wood. Did they use the wrong kind? Was it seasoned enough? Unseasoned wood like hickory will leave a bitter taste on the food and will put off to much white smoke as it burns. You don't want that kind of smoke, You want whats called the thin blue smoke and its transparent.

Understand, everyone has a different way of doing things. The RV park we're staying for now, the host asked if we'd like to buy a smoked ham from her grandson. He's a Boy Scout. I made up an excuse to not buy one, felt bad about it because I do want to support him/them..but I was afraid to buy remembering my last experience.

You're too kind. I'd tell her the truth. I'm sure she wouldn't hold it against you and it might make you feel better. Smoked foods don't appeal to some folks. :shrug:

On ribs, I'm not a food snob. When I was a kid, my mom "barbecued" short ribs in the oven. I believe she made a glaze that started with Hunt's tomato paste. :lol:

Now, I just prefer dry rubbed hickory smoked ribs. They have to make your lips numb, or you didn't have enough smoke.

LMGD's pineapple juice marinade has me intrigued.

Barbecue is like sex. Some's better than others, but none is bad!

Smoked foods don't appeal to some folks.

My mom is sensitive to smoked foods and doesn't care for them. She thinks they taste bitter, even when everyone else likes them just fine. Her idea of a good brisket is one done in the oven or crockpot, which is good too but my preference is wood smoked.

:nono: I don't want to take that chance.. Southerners are funny (not in a ha ha way) about one not liking their cooking. Like they'll say "you need to get some skin on them bones" or "what's the matter with you not liking that, you need to get your skinny rear on back up North" or "you talk funny, you're not from around here are you..get your behind on back up North." Frankly, I don't want to make them mad. I like them and I am so over Maryland now. See my dilemma?

Leaving silly behind, you're right..truth is always best. Thanks.
