Add in some shredded carrots, and maybe some beets, and some garlic as well. You can use some red cabbage mixed in to add color as well. And a bit of apple too.

My ex-MIL made killer sauerkraut but it wasn't unusual - just shredded cabbage and whatever else left to rot until it's ready.

Mr. B from the old McKay's recipe was very simple. He told me that he cut the core out of the cabbages, fill them with salt, and store them in a leak proof covered container until they were finished "working".
