This is what I want to make....
1 package tofu shirataki fettuccine shaped noodle substitute
1 tsp reduced fat sour cream
1 wedge spreadable light Swiss cheese
1/2 cup frozen broccoli florets, thawed
1/2 cup chopped spinach
3 oz. frozen ready-to-eat medium shrimp, thawed
2 tsp reduced-fat parmesan-style grated topping
Optional seasonings: salt, black pepper

One day I'm going to make you tofu and you will gobble it up with a smile on your face. Tofu is actually very good, depending on how you prepare it.

Giant & Safeway in PF both carry it, although I usually find more of a selection in Safeway. It's in a black box. I've also ordered it online before they started carrying it in the stores. The spaghetti is a little thinner than some other brands (still good though) but the other noodles are so similar to other brands I hardly notice a difference.
Have you thought about just nixing the pasta altogether and just replacing it with vegetables? I think spaghetti sauce tastes great over steamed broccoli (I admit I got major side-eye from Dustin for this, and he's the one who dips his pizza in bbq sauce ). Then again, I don't like substitutes. I want real butter, real pasta, etc - not the fake stuff. There's also brown rice pasta, but I haven't tried that.
