If we get the "Snowmageddon" the forecasters are calling for, what's everybody cooking for the storm meal? I'm thinking beef stew.

We're leaning toward pizza. I got Monello some 00 flour and he made the best crust the other day, so now we're jonesing for more.

My home made pot roast cooked in the crock pot. Served with buttermilk biscuits! Great meal on a cold night!
 
I lean more towards a late big breakfast. Thick sliced Challah bread french toast, home fries, omelets.....

Same as any other day....whatever I think of or find in the freezer. :shrug: Maybe ribs on the smoker since I'm off Friday.

I got a flank steak marinating, ready for the grill (yep, even in the snow, I'll be out there grilling...).
 
Slow Cooker Buffalo Chicken Soup

Yield: 4-6
Prep Time: 15 minutes
Cook Time: 20 minutes - 4 hours



Ingredients:

•1 tablespoon butter
•1/2 large onion, peeled and chopped
•2 garlic cloves, minced
•3 large carrots, sliced
•3 celery stalks, sliced
•1 pound boneless skinless chicken breast
•1/4 cup Frank's Red Hot cayenne sauce
•1/4 cup good blue cheese dressing (could also use low-cal dressing)
•4 cups chicken stock
•1/2 cup crispy tortilla chip strips
•1/4 cup crumbled blue cheese
•1/4 cup chopped green onions

Directions:

1.Place a skillet over medium heat and add the butter. Once the butter has melted add the onions, garlic, carrots, and celery. Saute for 5 minutes to soften.
2.Slow Cooker Method: Place the sautéed garlic and onions, carrots, celery, chicken breasts, franks hot sauce, blue cheese dressing, and chicken stock in a crockpot. Cover and turn on. Cook on high for 2-3 hours, or low for 4-5 hours.
3.Stovetop Method: Place the sautéed garlic and onions, carrots, celery, chicken breasts, franks hot sauce, blue cheese dressing, and chicken stock in a stockpot. Cover and bring to a boil. Then lower the heat and simmer for 15 minutes.
4.Once the soup has cooked, take the chicken breasts out. Using two forks, shred the chicken and place back in the soup.
5.To serve: Scoop the Buffalo Chicken Soup into bowls and sprinkle with crunchy tortilla strips, crumbled blue cheese, and green onions.

NOTES: 1) If you can't find crispy tortilla strips, you can use crumbled tortilla chips or make your own by cutting corn tortillas into strips and quickly frying them. 2) No nutritional information is provided. I don't calculate nutritional facts on any of my recipes, and this one can vary greatly based on the toppings and dressing.

Thursday dinner will be a lazy meal of beef pinwheels, kale salad, couscous with cranberries and portobello mushrooms. Friday dinner will be a roasted leg of lamb with chimichurri sauce, brussell sprouts, spiral cut roasted potatoes. Saturday, since everyone will be home lunch will be peri peri chicken (Angolan recipe I've perfected it to taste exactly like nandos) and dinner will be indian masala fish with rotis or naan and sunday lunch will be Moroccan-spiced seared scallops with green grape and lemon relish, salad and Israeli couscous and dinner will be tandoori chicken thighs, salad, naan and roasted veges of tomatoes, peppers, and onions. Very easy prep.

What is wrong with people? Do they not have pantries and freezers stocked with NORMAL, average amounts of food?

He was getting bread to go with the leftover unstuffed cabbage soup (they) and leftover chicken soup (me) we were having for dinner, but left there and went to Giant.

I think the pizza idea sounds awesome and we love making pizzas, so that's what I am going to plan for Saturday. We might either have meatball subs on Friday or go get Nick's subs - depending on how much smow we get by dinnertime. I'm supposed to go to Newark, DE on Sunday for a baby shower, but I have a feeling that will be cancelled. :ohwell: SO, I am planning to use up the frozen boneless chicken breasts, stuffing mix, add some broccoli and make a casserole. :yum:

That should take us into Monday, and I would still have a few things in the freezer. :shrug:
