Get an automatic water bowl (gravity feed / air displacement thingy using a soda bottle, I've got one you can have) and leave out a big bowl of food. Problem solved. No need for somebody to watch the cat. Cats are self sufficient so long as their servant human supplies them with their required food and water.

We've left our cats alone for a week before. No problems since we use the above method.
