1 pkg flour tortillas
1 10 oz. package frozen spinach thawed and drained
1/2 cup sliced green onions
1 T butter or margarine
1 cup ricotta cheese
1/2 cup sour cream (think I can use light s.c.?)
2 cups shredded jack cheese
1 10oz can enchillada sauce
more sour cream, sliced green onions
Heat oven t0 375. In medium saucepan, saute onions in butter until tender, add spinach and cook until all moisture is evaporated. Remove from heat, stir in ricotta, sour cream and one cup of cheese.
Warm tortillas, spoon 1/2 cup of mixture in tortilla, roll up. Place in 13 x 9 pan. Pour sauce over. Add more cheese and onions. Bake 15 - 20 minutes.
How's that sound?
I'll let you know how it turns out. I want to start making some "meatless" meals besides salad, but I'm not big on veggies.Airgasm said:

IMHO, don't use the recipe I posted. Too much spinach. They weren't offensive, but they weren't good. Like Air said, I think if you put chicken or chorizo in them (and then half the frozen spinach or fresh spinach), they might be ok. The dog liked them though, and she usually won't touch spinach.jazz lady said:Please do. I'd like to try to make them myself. I stopped at Chevy's in Annapolis recently, was surprised to see them on the menu, and ordered them. I was VERY disappointed. There used to be a restaurant called Plata Grande in Annapolis where Copeland's is now that made THE best spinach enchiladas but sadly they went out of business years ago.
