Spinach Enchiladas

For GREAT Mexican food, in a little place called Cape St Clair outside of Annapolis there is a TERRIFIC restaurant-The Broadneck Grill, the chef makes the best enchiladas and Mexican fare!

Great food and atmosphere that I haven't found duplicated anywhere else. It became Casa Grande for a bit, closed, and reopened as Copeland's. I love Copeland's too but I sure miss the mexican food.

IMHO, don't use the recipe I posted. Too much spinach. They weren't offensive, but they weren't good. Like Air said, I think if you put chicken or chorizo in them (and then half the frozen spinach or fresh spinach), they might be ok. The dog liked them though, and she usually won't touch spinach. :lmao:
I thought your recipe looked like it has too much other junk, and not enough spinach. I'm going to make some in a few minutes with fresh spinach, garlic, cumin, cilantro, and jack cheese.

Taste great w/broccoli too-mild enchilada red sauce and lotsa cheese! :drool:

After 10 yrs., Copeland's closed unexpectedly on Jan. 30.-Officials from Al Copeland Investments Inc., a private Metairie, La.-based restaurant operator headed by the man who founded Popeyes chicken, said the business closed in response to a plan the land owner had to bring a new retail use to the Copeland's spot. Copeland's is in the Annapolis Restaurant Park just across from the mall.

The restaurant park is zoned for several commercial uses including stores, banks and hotels.

:ohwell: There are still Copeland's in Columbia, Rockville, and Alexandria. :shrug: Actually, it doesn't surprise me that it closed. The last few times I was in there it wasn't very busy.
 
Can someone delete this thread or start something else? Everytime I see "spinach enchiladas" I get a little throwup in my mouth.

I still get mad when I drive by the place and It's not there anymore.

:love: I miss that place enormously. THE best Meixcan style food around bar none. :yay:

There should not be any spinach in potato tacos. Mashed taters, onion, salt and pepper.

They were supposedly SPINACH enchildas, NOT potato tacos. :smack:
