Spinach Enchiladas

In my other life, I was a manager at LaPlata Grande/Margaritas Maggie's back in the mid-late 80's-what great food and such a fun place to work. The kitchen staff was the best!
For GREAT Mexican food, in a little place called Cape St Clair outside of Annapolis there is a TERRIFIC restaurant-The Broadneck Grill, the chef makes the best enchiladas and Mexican fare!

I thought your recipe looked like it has too much other junk, and not enough spinach. I'm going to make some in a few minutes with fresh spinach, garlic, cumin, cilantro, and jack cheese.BS Gal said:IMHO, don't use the recipe I posted. Too much spinach. They weren't offensive, but they weren't good. Like Air said, I think if you put chicken or chorizo in them (and then half the frozen spinach or fresh spinach), they might be ok. The dog liked them though, and she usually won't touch spinach.

After 10 yrs., Copeland's closed unexpectedly on Jan. 30.-Officials from Al Copeland Investments Inc., a private Metairie, La.-based restaurant operator headed by the man who founded Popeyes chicken, said the business closed in response to a plan the land owner had to bring a new retail use to the Copeland's spot. There are still Copeland's in Columbia, Rockville, and Alexandria. :shrug: Actually, it doesn't surprise me that it closed. The last few times I was in there it wasn't very busy.

Gawd ! , I loved LaPlata Grande / Margarita Maggies ! !
I still get mad when I drive by the place and It's not there anymore.
I miss that place enormously. THE best Meixcan style food around bar none.
