No I am just kidding about the soup. I got enough stuffed ham goodies to last another week. I took a break today and cut the goose breasts up finally and wrapped those in bacon. Those were a nice break from the stuffed ham.

I was introduced to you and itsbob once. years ago when the current Mexican food place on 235 by the hotel used to be the Philly Steak Sub place a while back.

Stuffed ham and tortellini (sp) soup made with chicken stock canned tomatoes and fresh spinach.

And a crusty loaf of bread.

I'm eating it right this minute and holy cats is it deluscious! Definitely a keeper.

And that cornbread is to die for. I slathered it with Irish butter and it is probably the best cornbread I've ever had.

Cool. Glad you liked it. Since you gave it your thumb up, I will take a crock pot of it to a pot-luck tomorrow.

I also have a crock pot of homemade turkey soup, with leftover stuffing made into fluffy delicious balls.....that taste wonderful, and sorta resemble matzo balls. :drool:

The cornbread is simple: A little box of jiffy mix, a full can of creamed corn, and a small can of green chilies. Mix the jiffy according to the box directions and add the corn and chilies and a handful of shredded cheese. Takes about 40 minutes to bake because it has so much moisture in the batter. A lighter texture. Erosion calls for the same add-ins, but two boxes of jiffy mix.

It will be a huge hit. I'm stuffed (ha) but debating another bowl of it.

I wondered if that wasn't creamed corn in the cornbread. It was sweet and moist and corny - perfect!

I need to try this after I get back from my vacation! I totally cannot make good cornbread to save my life! It always crumbles into pieces.
