What makes corn chewy

Storing it in the fridge and letting it sit around for too long after it's been picked. Sweet corn is best the very day it comes off the stalk, but can hang in there for two days after max. After that it's trash.

Cook by grilling, as Larry said, or you can throw them unshucked into the microwave for 3-5 minutes, depending on how many ears. If you must boil, throw the shucked ears into hard boiling water for 5 minutes or so.

okay :mad: I need help from a pro, what's the best way to make corn? I just bought some from McKays (Charlotte Hall) again :iamstupid: and boiled it with sugar and still chewy and zero flavor :mad:

What makes corn chewy or what is the appropriate way to boil it? Im from PA and was always told to boil it for 10 minutes and then it's good?? :shrug: IDK???

When I do it on the stove top I bring my water solution (water, sugar, lemon juice) to a boil, place the ears in the water, cover the pot, turn the heat off and wait about 10 minutes. About perfect every time.

First, I add a splash of milk & a tablespoon or so of sugar to the water, and bring the water to a boil. Add the ears of corn, and boil about 5 mins or so. They come out pretty darn good!

I have never in my life boiled corn with anything other than salt. someone please explain this sugar and milk stuff and what I'm apparently missing.

I'm not sure what the reasoning is, but one of my BFF's does it this way, and FH's mom does, too. :lol:

The theory is that it takes crappy old corn that should be livestock feed and makes it palatable for humans. I have never seen it work in practice. But I'm also a corn snob.

5 minutes holy crap! :yikes: That could be part of the problem! I throw mine in boiling water for 1 minute. Drain top w/ some butter voila perfect every time.

What kind of corn are you buying? The yellow kind is always chewy to me...I usually buy white. The best is the Silver King the amish sell at the Charlotte Hall Library. Shuck and drop into boiling water for 1 minute. Drain top w/ butter salt pepper voila perfect corn!

Okay so going by the responses..... :shrug: I still don't know? I'm going to try the microwave. I bought it just yesterday so it wasn't sitting in the fridge or on the counter getting old.

yeah but you bought it at Mckays in charlotte hall...I'm sure it was picked daaaaayyyys ago. So it just could be bad corn. The amish are open on Wednesday too. You should head over there this weekend and grab some. I think its like $6 a dozen.
