The Perefect Egg

Well, for me, anyway.

I like eggs that can be dipped, soft runny yolks, but I don't like runny whites. Over the years I've tried lots of variations to get to the 'perfect' egg where the yolk is runny but the whites fully cooked. Too often in an attempt to get the whites cooked, the yolk does too.

Today I had an apostrophe.

I separated the yolk from the white. Put the white on the griddle until it was fully set, THEN added the yolk on top.

Perfect.

IMO, the key to cooking what I call "Dippy Eggs" is to cook on a low heat. Perfect every time! Over easy.

Anyway, that's a lot of trouble to go to for an egg. Is this what happens when you retire?

Love my eggs overeasy. Low heat in electric griddle,cook on one side for about 4 minutes, when you flip the egg, turn the heat off. Let it set in the griddle for about 45 seconds - 1 minute. Whites are done and yolk is runny.
