I love how I can throw in whatever veggie is in the fridge. Tonight's addition was leeks and kale. And I substituted some barley for part of the lentils.

We had tuna fish made with hard boiled eggs, chopped onion and celery, mayo, jalapeno relish, and Old Bay. Wrapped in lettuce leaves it was a carb free meal!

Last night was better - bacon wrapped meatloaf.

Liked everything about the tuna fish, except the chopped onion, bacon wrapped meat loaf sounded fantastic. Just not an onion fan.

Chicken Parmesan with Marinara sauce, and Italian salad. Finally, got the hang of getting the chicken thin enough!

I'm in the mood for some swedish meatballs over noodles. And green beans. And a beer. I think cold weather makes me crave comfort food.

I made ham and bean soup Monday. Ate it again last night, always taste better after it sits for a couple of day. Roasted garlic bread to go with it and a salad. Yummy.

I buy the think sliced chicken. I can't stand pounding chicken. Yuck!

I will try the thin sliced next time. Your idea seems a little more appetizing, and a little less cruel, and inhumane, as well! Tonight's dinner is marinated London broil on the grill. No pounding necessary.

Hoisin sauce chicken on the grill, diced, served with peanuts, Thai peppers from the garden on lettuce wraps.

That sounds incredibly delicious, and, now, I am incredibly hungry! I will make a note not to read the dinner thread so close to dinner time!

I am going to read for ideas especially on the nights that I don't have anything planned for dinner. Usually I have it planned out a few days in advance. Based on the work schedule.

Tomorrow night is beef kabobs grilled, quinoa with chopped dates, apricots, almonds and a little nutmeg, a salad of oranges, radishes, artichokes, kalamata olives, with little lemon juice and olive oil.

Spoiling my husband, had fried chicken and potato salad. Having all his favorites that he couldn't get in A'stan. Lunch today was bbq ribs.
