To me eggplant can have a bitter taste. If you are going to use it fried in larger slices salt them heavily and let them sit for several hours. This will draw out much of the liquid and the bitterness, it will also give the fried results a firmer texture. Discard the water and you shouldn't even have to rinse them off. Pat dry, then egg dip and bread them as you would a cutlet.
