I didnt have time to bring anything from home so...Whats for Lunch? I'm having leftover spaghetti for dinner so all tomato sauce dishes are out.

"Homewrecker" from Moe's. Big, fat, steak burrito with pintos, mushrooms, lettuce, and cheese. (And Cholula Hot Sauce).

Everything sounded good, but I wound up going to Taco Hell and getting their new Cantina Bowl. Imho, it sucked!!! Not worth the $ 6.25 I paid for it. Oh Well, shouldve known better.

I got that awhile back and thought it was gross! I got it with out the corn salsa and with the dressing on the side. It was all just thrown together with a huge pile of nasty guacamole and I love guacamole !

I had three over-medium eggs and the melon that Belvak set me up with yesterday.

Tonight's dinner will be spaghetti squash lasagna. YUM!!

I've heard of vegetable lasagna, never made it though....might have to change that though :yay:

I wouldn't mind having your recipe :hinthint: :biggrin:

You just make it like normal.

  • Spaghetti sauce, however you make it. I do mine with onion, Italian sausage and mushrooms.
  • A tub of ricotta mixed with 1 egg and 1/2 C shredded parmesan.
  • 1 decent sized spaghetti squash.
  • A pound of mozzarella, either fresh or whatever the other stuff is.

Vent the squash by sticking it with a knife in 4 or 6 places. Bake at 350 for an hour. When it's done and cool enough, cut it in half lengthwise, remove the seeds, then pull out the spaghetti-like pulp with a fork. You can do this in advance and put the squash in the fridge until you're ready for it.

In your 9x13 lasagna pan, layer a bit of sauce so things don't stick, then go:
  • squash
  • sauce
  • ricotta
  • mozz
until you run out of stuff (just make sure you end with the mozz on top).

Bake at 350 for 30 or 40 mins, until everything is hot and bubbly.

Writing that made me starving, so I'm off to start putting it together. :yum:

You can vent the Spaghetti Squash, and do it in the Microwave with a little Water in half the time, it's good.
