I like grilled steak with heavy seasoning. The charred seasoning is extra yummy. :yum:

I second Dry Dock. Now that Ben's back, you can't go wrong. He makes a mean ribeye, always done exactly right. The filet is good (served w/ a crab cake) too, but I prefer the ribeye. If they're serving a risotto for a side (on any dish), I make certain to ask for it. ribeye and risotto. ymmmm...

I know Toot very well. He's working down at Dew South now.

The hand trick is one I was taught and use often. Feel the fleshy part of your hand at the base of your thumb. That is the feel of a rare done steak. Put your index and thumb together and the feel is now for medium-rare. Middle plus thumb equals medium. Ring plus thumb equals medium-well and little finger plus thumb is well done. :yay:

That is pretty interesting... I had never heard of that one!! Good to know.

..but I just tried it and I didn't feel much of a difference. I must be doing something wrong.

:yay: And that is the ONLY way to tell the doneness of a steak without cutting into it and ruining it.

You also have to let it sit for at least 10 minutes after you pull it off the grill so the juices can settle.
