Cowboy Bean Soup

1/2 lb bacon
1/2 lg yellow onion, chopped
3 cloves garlic, minced

1 lb smoked pork, chopped
2 carrots, diced
2 stalks celery, diced

1 can pinto beans
1 can white beans (navy, cannelini, etc)
1 can diced tomatoes

2 C chicken stock
1 tsp chipotle chili powder
1 tsp coarse black pepper
1 tsp parsley
1/2 tsp thyme

Chop bacon into small strips and cook with onion and garlic until crisp (the onion will be carmelized). Remove most of the fat.

Add pork, carrots and celery, and cook until veggies are semi-soft.

Add beans and tomatoes, including liquid.

Add everything else and bring to a low boil. Reduce heat, adjust seasonings, and simmer for an hour.

I was never a huge bean soup fan because it was always so bland. My friend Sandi introduced me to the can of tomatoes, and the recipe went from there until it tasted good.

I have peanut butter and white chocolate chips. I should bake cookies...

Speaking of bean soup and ham bones, what do you think I could do with a ham bone from a Honey-Baked Ham? I would think that it would retain too much of a sweet flavor for bean soup.

Any suggestions are welcome!

I'm making cookies. I've done cake mix snicker doodles, peanut butter cup, and peanut butter. next is lemon poppy seed cookie.

We are doing Pecan tassies tomorrow...or today if we get bored. :lol:

Pumpkin tassies? Cranberry Pecan tassies? Hook a sister up girl! Need recipes! We always make pecan, but I'd love to try these morsels out. Tassies are my favoritest.
Start out with the traditional cream cheese dough:

Sour Cream Dough
1 cup unsalted butter
1 cup sour cream
2 large egg yolks
2 cups flour, sifted
Mix dough ingredients as for pie crust. Roll into 2" in diameter rolls and slice into approximately 36 portions. Press into muffin cups. Makes 4 doz.

Then you have your choice of fillings:

Cranberry-Pecan Tassies
Cream Cheese dough for 2 dozen cookies
1 egg
3/4 cup packed brown sugar
1 teaspoon vanilla
Dash salt
1/3 cup finely chopped cranberries
3 tablespoons chopped pecans
In a mixing bowl beat egg, brown sugar, vanilla, and salt just until smooth. Stir in cranberries and pecans. Spoon filling into the pastry-lined muffin cups.

Bake tassies in a 325F. oven for 20 to 25 minutes or until pastry is golden brown. Cool in pans on wire racks. Remove from pans by running a knife around the edges. Store in airtight container. Makes 24 tassies.

or

Pumpkin Filling
1 recipe cream cheese pastry
1 egg
1/2 cup canned pumpkin
1/4 cup sugar
1/4 cup milk
1 teaspoon pumpkin pie spice
Beat all ingredients together. Fill unbaked Tassie crusts; bake at 350F for 20 minutes.

Eh, too late on the ham bone. I decided to try my luck on a pot of bean soup after all.

Gimme your lemon poppy seed cookie recipe. I was going to make some Lemon Cool Whip cookies, but will probably wait until after my nap. :yawn:

I've never made these before so if they suck... it's not my fault :lmao:

Cookies
2/3 cup granulated sugar
1/2 cup butter, softened
1 egg
2 teaspoons grated lemon peel
1-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon poppy seeds

Glaze
1 cup powdered sugar
2 tablespoons lemon juice

Preparation:
1. Preheat oven to 350°F.

2. For cookies, beat granulated sugar and butter in large bowl of electric mixer at medium speed until creamy. Beat in egg and lemon peel. Combine flour, baking soda and salt; gradually add to butter mixture. Beat in poppy seeds on low speed.

3. Drop dough by heaping teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake 11 to 12 minutes or until edges are lightly browned. Let stand on cookie sheets 1 minute; transfer to wire racks and cool completely.

4. For glaze, combine powdered sugar and lemon juice in small bowl; mix well. Drizzle glaze over cookies; let stand until glaze is set, about 20 minutes.

Makes about 2 dozen cookies

Chicklet decided we should have chicken in the crock pot with carrots, corn, potatoes, and peas. Then add noodles later. I am thinking dumplings, maybe.

Cool Whip Cookie Recipe

Ingredients:
1 (8 ounce) container frozen whipped topping, thawed
2 eggs
1 (18.25 ounce) package lemon cake mix
1/3 cup confectioners' sugar for decoration

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
2. Beat together the whipped topping and eggs together. Add the lemon cake mix and continue to mix. Dough will be thick but really sticky. It's best to refrigerate the dough first to make it easier to handle while making into balls.
3. Drop by teaspoonfuls into a bowl of confectioners' sugar and roll to coat. Place cookies on the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 8 minutes.



You can substitute any cake mix flavor for the lemon variety, but the lemon ones really are pretty dang yummy.
