I vacuum seal everything. Extends the life enormously. And then rotate stock. Use the oldest item, replace it.
Took out a NY strip steak that I had frozen back in February. Grilled up perfectly, never know it was almost a year old.

I bought a lot of surplus expecting mass chaos when Trump got elected. Looks like that's not going to be a problem, so starting to use the older stuff.

I started freeze drying 3 1/2 years ago. I can take teriyaki chicken breasts freeze dried 3 years ago, rehydrate with a little hot water and they taste like they just came off the grill.

Which machine you use?
Harvest Right is really the only company available for home use. I have 2, they are expensive and you need all the gadgets for sealing, packaging and what not. I was a canner, dehydrator, person for 30 years so it was worth it to me. They have tried to make the machines more idiot proof over the years but there is still so much science to know and learning curve to get through.

We have a less expensive dryer bought at a farm supply back in the Midwest.
Pack the dried foods in Mason jars and pull a vacuum.

Just got back from shopping. I noticed certain things are in low supply or missing. Like the coffee in Aldis. A lot of empty slots, very sparse, but other stores were ok. I wanted some lobster for Christmas Eve. Places that normally have whole or tails for the holidays had none. I found one pac of frozen tails at Aldis. Last one.

Lots and lots of TP tho.......
