My son took this pic about a year ago, and I turned it black and white. It is one of my favorite pics. I think he has some real talent. I bought him a camera after this and he rarely uses it. :ohwell:

The other way I found that works nicely is

Duplicate the original layer
Add a Layer mask> Reveal all
Then paint in the color with a brush. switch from black to with color to add and subtract color.

It works well and if you make a mistake you can paint it back to B&W. Also you can do more than one thing or color in a picture.

I made the photo i posted by using Select>Color Range in PS CS3 and selecting the color ranges i wanted to be b&w, adjusting the "fuzziness" to select all of the color, then converted to b&w.

To do the selective coloring in PS7 i do this

1. Open photo to edit
2. Create a "Channel Mixer" layer, select the "monochrome" check box and adjust the sliders to the desired levels (this automaticaly creates a layer mask)
3. Select the brush size you want and paint over the parts you want color. If you mess up you do what JBR said and switch your color from black to white and brush over you what you want to fix.
 
I hit the beach this morning before work and took some sunrise pictures ... keeping my fingers crossed that they actually come out!
