Cabbage, yellow squash and zucchini

My ex FIL sent me a ton of the stuff. More than we can eat grilled or sauteed. I made cabbage soup last night and still have a whole other head of it. I have 5 HUGE zucchinis and several yellow squash. I need ideas.


Put a couple TBS of olive oil, garlic, sliced zucchinni, yellow squash, onion mushrooms, cut up tomatoes, and italian seasonings in a foil pouch. Seal it well and grill for about 15 miuntes. YUMMY over rice or by itself!

I don't think that she was looking for ways to grill zucchini/squash. :yay:

Just offering some other alternatives to plain grilled squash.

It would also make a good main dish if you add some chicken cut into small bite sized pieces. Everything in one pouch makes for easy cleanup!

I like the idea with chicken. I have some breasts in the freezer. Don't mind Mk, he's grumpy he had to go to work today. :lol:

My coworker said she cuts up lots of veggies and tosses in a pack of taco seasoning. Put it on tortillas with some sour cream and eat. I bet it'd be good with chicken too.

That sounds wonderful too! We have spinach tortillas at home and chili seasoning, maybe I'll try that.

I have the most awesome-ist recipe for a spiced zucchini bread that is sooooooo damn good. I'll try to post the recipe tonight. :drool:

Chocolate Zucchini Cake

2 cups all-purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1 1/2 cups vegetable oil
3 cups grated zucchini
3/4 cup chopped walnuts
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
2. In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini until they are evenly distributed. Pour into the prepared pan.
3. Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.

Is it good? Zucchini cake and bread interest me but I've never had either. I guess I have plenty and there would probably be no harm in trying.

Sure it is good. Chocolate Cake! You can't "taste" the zucchini, but you have the nutritional benefits. Just don't tell the kids it is in there.

Its very good. Well I cant atest to the chocolate cake but I make zuchini bread and muffins all the time and the kids eat them up!

Cook the cabbage down with onions and soy sauce and sear it.

I've got a yellow squash casserole I will PM you.

Throw the zucchini over by the sweet gum...:lol:

One of my favorite summer dishes...

Take a couple of yellow squash and zucchini and cut in half lengthwise. Cut the halves into chunks about 1/2" thick. Dice a large Vidalia onion. Heat a large fry pan until sizzling, add about 2 tbsp. olive oil and the same amount of butter. Add the diced onion, quickly saute for about a minute, then add the squash. Season with fresh herbs (or dried Italian seasoning), salt, and pepper, and cook on high for about 4 minutes, stirring frequently, or until the squash is crispy tender. Serve.

You can also make it in the microwave. Dice squash and onion as above, place in a large covered casserole dish, add olive oil, butter and seasonings, then nuke on high for 2 minutes. Stir, then nuke for another minute or so. :yay:
