Do you want some. We ate one zucchini and one squash last night. Still have a tone left.

Take a couple of yellow squash and zucchini and cut in half lengthwise. Cut the halves into chunks about 1/2" thick. Dice a large Vidalia onion. Heat a large fry pan until sizzling, add about 2 tbsp. olive oil and the same amount of butter. Add the diced onion, quickly saute for about a minute, then add the squash. Season with fresh herbs (or dried Italian seasoning), salt, and pepper, and cook on high for about 4 minutes, stirring frequently, or until the squash is crispy tender. Serve.
Absolutely AWESOME.
You can also make it in the microwave. Dice squash and onion as above, place in a large covered casserole dish, add olive oil, butter and seasonings, then nuke on high for 2 minutes. Stir, then nuke for another minute or so.

My ex FIL sent me a ton of the stuff. More than we can eat grilled or sauteed. I made cabbage soup last night and still have a whole other head of it. I have 5 HUGE zucchinis and several yellow squash. I need ideas.
I :heart: you!!!! I often fry squash (both yellow and zucchini), but never tried it like this. Talk about a HIT with Hubby and I!! Who needs anything else!!!
