Cabbage, yellow squash and zucchini

Take a couple of yellow squash and zucchini and cut in half lengthwise. Cut the halves into chunks about 1/2" thick. Dice a large Vidalia onion. Heat a large fry pan until sizzling, add about 2 tbsp. olive oil and the same amount of butter. Add the diced onion, quickly saute for about a minute, then add the squash. Season with fresh herbs (or dried Italian seasoning), salt, and pepper, and cook on high for about 4 minutes, stirring frequently, or until the squash is crispy tender. Serve.

Absolutely AWESOME. :yahoo:

You can also make it in the microwave. Dice squash and onion as above, place in a large covered casserole dish, add olive oil, butter and seasonings, then nuke on high for 2 minutes. Stir, then nuke for another minute or so. :yay:

Do you want some. We ate one zucchini and one squash last night. Still have a tone left.

Sure. My garden is making tons of green beans, but only about one little yellow squash a week, and only one zucchini a year.

:smoochy: I :heart: you!!!! I often fry squash (both yellow and zucchini), but never tried it like this. Talk about a HIT with Hubby and I!! Who needs anything else!!! :lol:

My ex FIL sent me a ton of the stuff. More than we can eat grilled or sauteed. I made cabbage soup last night and still have a whole other head of it. I have 5 HUGE zucchinis and several yellow squash. I need ideas.

Chop up squash/zucchini in half circles, chop onion the same
saute with cumin and lemon pepper in evoo over med
add colby jack/cheddar in at the end or just eat without cheese, a great side dish


If the cabbage is nappa saute it with fresh garlic pressed, salt, and pepper over low/med in evoo
add canned cannellini beans to warm through after cabbage has almost wilted, also a side dish :yum:

:yay: It's so simple but absolutely delicious. I'm glad you enjoyed it. And hopefully got an added bonus last night. :whistle:
