Baked Mozzarella Chicken Rolls - Pinch of Yum

This was absolutely delicious. I used fresh spinach, part skim mozzerella and ricotta. Enjoy!!

Where can I get fresh Mozzarella around here? And yes, I'm ashamed to ask because I'm Italian and should have been using fresh mozzarella all this time.

I usually buy it at BJs. They have a few different options for decent prices. But I've seen it at Giant as well as at Nick's in PF.

This sounds really good, I'm going to make it next week. I may also add some sundried tomatoes to it as well. Adds a bit of tanginess to it.

Thanks to your mention of sun-dried tomatoes, I remembered that I had some on my pantry (surprise, surprise!). I was making a stuffed flank steak.....spinach, feta cheese, line nuts, Greek seasoning.... I tossed in some of the sun-dried tomatoes, and, OMG! that was some kind of good.
