But what is Andoulee Never heard of it. What's in it? And ... bring some to the next party. My aunt makes some of the best jumbalaya. I think Crawdads, Turtle, Gator tail are great!

Andouille is a very spicy pork sausage used in many dishes. You can get a good version from Woodburn's, but it's not nearly as as the real thing.
