I know it sounds boring, but mustard is a good marinade for steak, too. Just slather the steak in mustard, let it air dry for 10 or 20 minutes and then grill.
Oh, I have to admit, I like mine med.rare and Pittsburgh on the outside. Not many places can do it, but it's SO good. I def. don't like it brown or cooked all the way in the middle, ruins the flavor to me. My husband used to order it that way until I started making his medium, now he admits it tastes better when it's not well done. Just my personal preference. Same with burgers, med. rare...YUM !!
