I make them once a week and use the entire bag for just two people. I'm always saying side dish for meatloaf, topper for cottage pie, etc but the next day there's never any left. I make really good mashed potatoes.
We never have left over mashed potatoes either. Must be a Southern thing.
My mom use to make huge batches from scratch because my dad liked "tater cakes" the next day, I hated them. They were basically fried mashed potatoes, pancake shape and size.

I make really good mashed potatoes.
For thanksgiving. I make the low fat version Heavy cream rather than milk, half butter and half cream cheese top with butter dots and bake after mashing Once and only once a year !!!You have me intrigued, how do you make them?

It's a four pound bag. I do a lot of cooking and a good portion of it is frozen and taken to my oldest son. I'll fix an entire bag of potatoes once a week because they're always a side for something I've fixed for him. So at least four good sized portions are already tucked away before they become "leftovers" earmarked for something like cottage pie. Once in a while they make they actually make it to the cottage pie. More often that that either my youngest or I have picked at them over the course of a day or two and they're gone.
