Good Cooking Weekend!

When I heard we're expecting snow this weekend, I started thinking about what I was going to cook. There's nothing I love better than to be in the kitchen cooking good food while it's freezing cold and snowing outside! :yahoo: So I started looking through recipes.

I think I'll make this Grilled Ribeye Steak with Onion-Blue Cheese Sauce on Friday night.

On Saturday I'm going to make a few different kinds of granola bars, because I like granola bars but I'm sick of the crappy-for-you ones at the store.

Saturday for dinner I'm going to make this Chicken and Noodles recipe. I'm going to change it a bit though. I'm not going to boil the chicken, because I just can't bring myself to boil any meat I'm going to eat. I'll roast the chicken and just use some homemade stock I made and froze a few weeks ago. I'm also going to make the noodles from scratch instead of buying frozen ones.

I need to find a good dessert recipe though. Any ideas? What do you all have planned to cook? :popcorn:

I do that with the chicken too, either roast it in the oven or outside. It does change the flavor. The meat is also a bit drier and tougher if you over-cook the breast meat. Under cook it a bit and let it finish cooking in the soup.

google "turtle trifle" I believe it is a southern living recipe...yumm. SO eats it with his eyes closed its soooo good:killingme. and it can be simple (with store bought pie) or you can make it from scratch. either way...:drool:

easy chicken pot pie

Not mine, just one of my favorites

INGREDIENTS
Crust
1 box Pillsbury® refrigerated pie crusts, softened as directed on box
Filling
1/3 cup butter or margarine
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups Progresso® chicken broth (from 32-oz carton)
1/2 cup milk
2 1/2 cups shredded cooked chicken or turkey
2 cups Green Giant® Valley Fresh Steamers™ frozen mixed vegetables, thawed

DIRECTIONS
1. Heat oven to 425°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie pan.
2. In 2-quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.
3. Stir in chicken and mixed vegetables. Remove from heat. Spoon chicken mixture into crust-lined pan. Top with second crust; seal edge and flute. Cut slits in several places in top crust.
4. Bake 30 to 40 minutes or until crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Let stand 5 minutes before serving.

faux shepards pie

INGREDIENTS
1 lb. lean ground beef
1/4 cup chopped onion
1 cup tomato pasta sauce
6 oz. (1 1/2 cups) shredded mozzarella or Monterey Jack cheese
1/2 cup sour cream
1 (8-oz.) can Pillsbury® Refrigerated Crescent Dinner Rolls
1/3 cup grated Parmesan cheese
2 tablespoons butter or margarine, melted

DIRECTIONS
1. Heat oven to 375°F. In large skillet, cook ground beef and onion over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Drain. Stir in pasta sauce; cook until thoroughly heated.
2. Meanwhile, in medium bowl, combine mozzarella cheese and sour cream; mix well.
3. Pour hot beef mixture into ungreased 9 1/2 or 10-inch glass deep-dish pie pan or 11x7-inch (2-quart) glass baking dish. Spoon cheese mixture over beef mixture.
4. Unroll dough over cheese mixture. (If using pie pan, separate dough into 8 triangles; arrange points toward center over cheese mixture, crimping outside edges if necessary.) In small bowl, mix Parmesan cheese and butter. Spread evenly over dough.
5. Bake at 375°F. for 18 to 25 minutes or until deep golden brown.

Season and brown hamburger meat, add chopped onion and maybe a little garlic halfway through the browning, put the mixture in the bottom of an uncooked pie shell, layer with a little shredded cheese then frozen peas, top with mashed potatoes (homemade, as if I should have to say it :lol:) and bake in a preheated 350 degree oven for about a half an hour, adding a little more shredded cheese on top for the last 5-10 minutes or so :yum:

Season and brown hamburger meat, add chopped onion and maybe a little garlic halfway through the browning, put the mixture in the bottom of an uncooked pie shell, layer with a little shredded cheese then frozen peas, top with mashed potatoes (homemade, as if I should have to say it :lol:) and bake in a preheated 350 degree oven for about a half an hour, adding a little more shredded cheese on top for the last 5-10 minutes or so :yum:

I made granola bars for the first time the other day. They were good but it said to cook them for 20 mins and that made them super hard. What should i do/ What recipes do you have for granola?

I think I will try this recipe this weekend. Sounds yummy! Do you think it will taste any different if I use a 8x11 glass casserole dish instead?

I made Ban Bang shrimp last week. You can either buy already breaded shrimp or bread your own. I like mine breaded with panko bread crumbs. For the sauce i used a sweet chili sauce, miracle whip, onion powder and garlic powder. You can use regular mayo but i like miracle whip. It has a nice tang to it.

Bang Bang Shrimp:

Breaded shrimp: Any size you like
1/2 cup of sweet chili sauce
1/4 cup of miracle whip (mayo)
1 tablespoon of garlic powder
1 teaspoon of onion powder

Mix all the ingredients together except the shrimp then chill in the frig so the flavors can marinate. Then serve with hot shrimp!

I made granola bars for the first time the other day. They were good but it said to cook them for 20 mins and that made them super hard. What should i do/ What recipes do you have for granola?

I've seen a few recipes that call for roasting the dry ingredients first, then mixing it with the wet. Some say to bake after that, and some don't.

I think I'll follow the basics of this recipe, but use different ingredients. I'd like some with craisins, and I'll make some with dark choc chips for hubby. I'm also adding flax seed because I have some to use up.
 
Weather Underground now has the storm tracking COMPLETELY south of Maryland and is forecasting a non-event... so I'm thinking burgers and dogs on the grill this weekend...:ohwell:

Well you wouldn't have a pie shell but I bet it'd still be really good. Oh and the leftovers, if you're lucky enough to have any, are even better! :yum:

These go real good with the steak:

  • 4 tennis-ball-sized white onions, peeled
  • Olive oil
  • 2 cloves of garlic, peeled and finely chopped
  • 4 twigs of fresh rosemary, lower leaves picked and chopped
  • 8 tablespoons heavy cream
  • A couple handfuls of grated Parmesan cheese
  • Sea salt
  • Freshly ground black pepper
  • 4 slices of bacon
Boil the onions in water for 15 minutes until slightly tender. Remove from the pan and allow to cool. With a sharp knife, remove the top inch of each onion, chop fine and place to one side. Cut about a heaping tablespoon out from the inside of each onion, keeping the outside intact. Finely chop and add to the rest of the chopped onion.
Preheat the oven to 400°F. Heat a frying pan and add a little olive oil, garlic, chopped onions, and a little chopped rosemary. Fry for a couple of minutes until softened, then turn the heat down, add the cream and remove from the heat. Stir in the Parmesan and season.
Wrap a slice of bacon around the middle of each onion and secure with a rosemary twig or wooden toothpick. Place the onions on a roasting tray and spoon some of the chopped onion mixture inside each one. Bake in a preheated oven for around 25 minutes until soft and tender.

Macaroni And Cheese

MACARONI AND CHEESE

2 c. (8 ounces) elbow macaroni
1 stick butter
1/4 cup minced onions
3 tbsp. flour
2 c. of milk or light cream
1/2 c. dry white wine (or water)
2 c. grated sharp cheddar (1/2 pound)
1/2 cup bread crumbs (topping)
Salt and freshly ground pepper
Cayenne to taste 1/2 tsp. paprika

Bring 4 qt. salted water to a rapid boil and cook the macaroni until not quite tender. Drain macaroni and set aside.
In saute pan, melt 1/2 the stick of butter (or 4 tablespoons). When melted, stir in the breadcrumbs and toast just until lightly browned. Remove breadcrumbs from pan and set aside. Wipe pan clean with paper towel and re-use for next step. Breadcrumb topping: Melt remaining butter, add onions, and stir over low heat until onions are just translucent, but not browned. Stir in the flour and seasonings. Continue to cook for an additional 2-3 minutes. Add the wine, then gradually stir in the milk or cream.

Simmer over low heat, stirring constantly until the sauce is thickened and smooth. Add cheese and continue stirring until the cheese melts.

Combine the macaroni with the cheese sauce. Turn out into a generously buttered casserole dish (approximately 1 1/2 quarts). If you have any extra grated cheese, you can sprinkle this on top along with the 1/2 cup of buttered, toasted bread crumbs.

Bake in a preheated 350 degree Fahrenheit oven for approximately 20 minutes or until heated all the way through and golden brown on top.

"Propose to Him" Banana Cupcakes

1 1/2 c sugar
1 stick unsalted butter, softened
2 large eggs
1 1/2 tsp vanilla extract
2 c all-purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 c buttermilk
1 1/4 c ripe banana, mashed

1. Preheat oven to 350 F
2. Cream butter and sugar with a mixer until light and fluffy
3. Add eggs and vanilla, and mix until batter is smooth
4. Combine all dry ingredients and mix into batter in 3 parts, alternating with buttermilk. Reduce speed to low and mix for 2 more minutes.
5. Line cupcake pan with wrappers. Using a spatula, gently fold mashed bananas into batter. Scoop into cups until 2/3 full.
6. Bake for 25 minutes and let cool (seems kind of long to me, I'd check at around 18-20 minutes)
7. For frosting, combine 2 c powdered sugar, 1 stick softenend unsalted butter and 1 tsp vanilla. Add 1 c creamy peanut butter and 3 tbsp milk. Mix until spreadable. Makes 18.
