"Mark It Zero"
MACARONI AND CHEESE

2 c. (8 ounces) elbow macaroni
1 stick butter
1/4 cup minced onions
3 tbsp. flour
2 c. of milk or light cream
1/2 c. dry white wine (or water)
2 c. grated sharp cheddar (1/2 pound)
1/2 cup bread crumbs (topping)
Salt and freshly ground pepper
Cayenne to taste 1/2 tsp. paprika

Bring 4 qt. salted water to a rapid boil and cook the macaroni until not quite tender. Drain macaroni and set aside.
In saute pan, melt 1/2 the stick of butter (or 4 tablespoons). When melted, stir in the breadcrumbs and toast just until lightly browned. Remove breadcrumbs from pan and set aside. Wipe pan clean with paper towel and re-use for next step. Breadcrumb topping: Melt remaining butter, add onions, and stir over low heat until onions are just translucent, but not browned. Stir in the flour and seasonings. Continue to cook for an additional 2-3 minutes. Add the wine, then gradually stir in the milk or cream.

Simmer over low heat, stirring constantly until the sauce is thickened and smooth. Add cheese and continue stirring until the cheese melts.

Combine the macaroni with the cheese sauce. Turn out into a generously buttered casserole dish (approximately 1 1/2 quarts). If you have any extra grated cheese, you can sprinkle this on top along with the 1/2 cup of buttered, toasted bread crumbs.

Bake in a preheated 350 degree Fahrenheit oven for approximately 20 minutes or until heated all the way through and golden brown on top.

I know I just posted my Greek meal recipes a little while ago, but I wanted to pass along a few more recipes from my archive... This is recipe for a sandwich that is probably my favorite sandwich EVER!!! It is Cuban in origin - and perfected in South Florida...

You'll need:
Meat
-Pork Roast
-Sliced Deli Ham
-Swiss Cheese

Condiments:
-Butter
-Mayo
-Yellow Mustard

Other:
-Sub-Rolls
-Sliced Dill Pickles
-Salt/Pepper
-Garlic Powder
-Olive Oil
-Square Pyrex Dish

To make:
-Preheat oven to 350 degrees
-Take a skillet and preheat it on the stove, LIGHTLY coating the skillet with Olive Oil
-Take a square glass Pyrex dish and LIGHTLY coat the bottom with Olive Oil... (Not Extra Virigin Olive Oil or EVOO like that Homo Rachel Ray says), but regular Olive Oil....
-Place the 2.5 pound Pork Roast (enough for about 6-8 sandwichs) into the pyrex dish and lightly salt with 2 pinches of salt (don't over salt or it'll be too salty)
-Coat the exterior of the pork roast with black pepper and sprinkle on the garlic powder
-Take the pork roast and place it in the hot skillet... Your goal is to lightly sear the exterior, sealing the flavors into the pork roast. Do this on each side for about 2-3 minutes each.
-Place the seared pork roast back in the pyrex dish, and place in the oven for 30-50 minutes. Be sure the center of the pork roast reaches 160 degrees using a handy meat thermometer.
-Once it is cooked, pull it out of oven (using oven mits) and let it rest for AT LEAST 15 minutes. (You will want to cut it and eat it probably, but resist at all costs). By resting the meat, you allow the juices to redistribute in the meat and you let it cool and firm up some so you can slice it easier.

Sandwich Prep:
-On a cutting board, slice the pork roast into 1/8 inch thick (or so) slices
-Cut your sub roll open
-Spread butter on one side of the bread
-Spread Mayo on the other side
-Squirt on some mustard
-Add sliced swiss cheese
-Place warm pork roast on top of the cheese
-Add 2-3 slices of sliced ham
-Add sliced dill pickle

Finish:
-I usually close the sandwich and add 2 toothpicks to each side, completing it with a diagonal slide down the center.

"Propose to Him" Banana Cupcakes

1 1/2 c sugar
1 stick unsalted butter, softened
2 large eggs
1 1/2 tsp vanilla extract
2 c all-purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 c buttermilk
1 1/4 c ripe banana, mashed

1. Preheat oven to 350 F
2. Cream butter and sugar with a mixer until light and fluffy
3. Add eggs and vanilla, and mix until batter is smooth
4. Combine all dry ingredients and mix into batter in 3 parts, alternating with buttermilk. Reduce speed to low and mix for 2 more minutes.
5. Line cupcake pan with wrappers. Using a spatula, gently fold mashed bananas into batter. Scoop into cups until 2/3 full.
6. Bake for 25 minutes and let cool (seems kind of long to me, I'd check at around 18-20 minutes)
7. For frosting, combine 2 c powdered sugar, 1 stick softenend unsalted butter and 1 tsp vanilla. Add 1 c creamy peanut butter and 3 tbsp milk. Mix until spreadable. Makes 18.
I made these today. They're pretty good, but more dense than traditional cupcakes. As blasphemous as it sounds, I'd almost have preferred to just add some banana extract so they'd be light and fluffy. The icing is to die for though, and would taste great on chocolate cupcakes.

I made the steak with onion blue cheese sauce. It was really good.

We made it last night too. It was good, but almost too rich for me. :lol: I think I'll make it again, but cut the cream with just a little beef broth. I'll also leave out the blue cheese and add mushrooms. :yum:

I would still use blue cheese but less. Hubby thought about using mushrooms too. Over all i was surprised how good it taste.

What?!
When I heard we're expecting snow this weekend, I started thinking about what I was going to cook. There's nothing I love better than to be in the kitchen cooking good food while it's freezing cold and snowing outside! :yahoo: So I started looking through recipes.

I think I'll make this Grilled Ribeye Steak with Onion-Blue Cheese Sauce on Friday night.

On Saturday I'm going to make a few different kinds of granola bars, because I like granola bars but I'm sick of the crappy-for-you ones at the store.

Saturday for dinner I'm going to make this Chicken and Noodles recipe. I'm going to change it a bit though. I'm not going to boil the chicken, because I just can't bring myself to boil any meat I'm going to eat. I'll roast the chicken and just use some homemade stock I made and froze a few weeks ago. I'm also going to make the noodles from scratch instead of buying frozen ones.

I need to find a good dessert recipe though. Any ideas? What do you all have planned to cook? :popcorn:

A lot of the recipes on that site look :yum:
