Chalk it up to experience / experiment, and try again!
I did the same withe making burger meat. Found a nice eye round roast, ground it, looked terrif, cooked up terrible because there wasn't any fat at all in it..... 99% ground beef does not make good burgers.
I think it'll be fine once it's sliced thin and I know what you mean about the burgers.
