Quick ice bath after cooking helps to separate the eggshells. :yay:

When the water starts boiling, remove your pot from heat, then cover for about 10 minutes. Drain the hot water and replace with icy water for about 10 minutes. Perfect egg every time. :yay:

It's the temp difference that's the key. When they're hot if you make 'em cold(or vice-versa) that damn inner membrane separates from the albumin so that it peels off with the shell.

edit: so if you take em out of the fridge, run them under hot water for a few and then commence to peel

Lots of ways to hard-boil eggs. I start them in cold water and when they get to boiling, I turn off the heat and let them sit for 10-12 minutes or so.

Also very fresh eggs don't peel as well as eggs that are a week or more older.

Also - when you take them off the stove - I "tap" them with the blunt end of a butter knife, just enough to crack the shell a bit... A chef once told me that this lets in cold water and makes them easier to peel. I think it works. :)

Usually the cold shock of dumping them from hot pan into icewater (mostly ice) has worked for me, but not this time (yesterday). So although I thought I had it pegged, I'm not so sure at the moment. Maybe the freshness tip has something to do with it.

I typically have HBEs in the fridge and this tread made me hungry for egg salad. So that's what I had for dinner.

after the ice water bath; do the tap and roll method on the counter - peel right off easy peasy. (tap both ends on counter - then roll egg until all cracked)

Let me guess you didn't buy the eggs specifically for boiling? :shrug: Next time you are in the grocery store ask them to show you the boiler eggs. There is a little symbol on the carton that tells you if they are for frying or boiling. Your welcome!
