What are you guys serving? I thought I would get a head start on planning. I think I'm going to do the fried pickles again. :drool: This year I'm doing chips instead of spears.
I want some new ideas. I'd really like to try an oyster stuffing. Any good recipes out there?
Anyone make pumpkin butter?

I'll probably serve Christmas Eve dinner for family in town (grandparents and siblings). Last year I made the usual: turkey, stuffing, corn, biscuits, cranberry sauce, etc. I enjoy cooking, but seldom get to make large meals. :cheers:

I'm lucky that she HATES help when she's cooking. I sure wish she felt the same about the dishes. :ohwell:

Fried pickles? Never had 'em. Sounds gross. :lol:

I really hope to have the money to make a stuffed ham for thanksgiving dinner, ( I try to take one to my family dinner every year, my dad loves it ). But with the pay cut this year I am not sure I will have the money. we have about 40 + at our family dinner so you are talking a lot of stuffed ham, it can be pretty costly.....But it sure brings Joy to my family that only have it when I make it at Thanksgiving time once a year.

We had Thanksgiving Dinner at my house last year, we had 42 family members. It was my best Thanksgiving ever......I love being the Hostess......This year it will be at the Summer Home in Ridge again...

Probably going to be a Hungry Man Meal. But I wont microwave it, Ill actually put it in the oven so it appears I did something this year.

What do you put pumpkin butter on? Sounds like it'd be sweet. Mmm, I make apple butter pumpkin pie...wow...:drool:

My sister says her friend mixes pumpkin butter with cream cheese and spreads it on graham crackers.

I do something similar but then you roll it in a ball and cover it w/ cinamon sugar graham cracker crumbs and serve it w/ graham cracker sticks. it is :yum:

My sister says her friend mixes pumpkin butter with cream cheese and spreads it on graham crackers.

Ingredients
1 cup apple butter
1 cup fresh or canned pumpkin
1/2 cup packed brown sugar
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
3 eggs, slightly beaten
3/4 cup evaporated milk
1 unbaked 9-inch pie shell
Sweetened whipped cream, for garnish

Directions
Preheat oven to 425 degrees F.

Combine apple butter, pumpkin, sugar, salt and spices in a bowl. Stir in eggs. Gradually add milk and mix well. Pour into pie shell. Bake for about 40 minutes or until set.

Just beat together equal parts of cooked pumpkin (canned is fine), honey and soft butter together, add more honey if you like it sweeter. It's great on any fried bread dough. Will last in fridge for almost two weeks. I freeze some in little containers for a quick snack on bagels or to melt on sauteed chicken ect. You can't mess this up, it's so easy you'll think that you can cook:)
