Tilapia, rice, and mixed veggies

My friend made tilapia last night and my coworkers making it tonight (yes, I've asked around for inspiration...I'm bored :lol:). If I didn't hear anything that 'sounded good' for tonight here, I was going with that. So far though, I think I'm gonna have to go with Pixie's shrimp po boys.....so far......maybe :lol:

I sure would love to have a slice of pumpkin pie right now. :ohwell:

Last night I fixed weight watchers chicken burgers on the grill with just a touch of season salt, they were good. :yum:
 
Crock-Pot Manly Meatloaf

Prep time: 10 mins
Cook time: 8 hours
Total time: 8 hours 10 mins
Serves: 12

Get out the big crock-pot for this recipe! I used a 7 quart crock-pot myself. I like to do a glaze on top of my meatloaf….to make just combine ½ cup ketchup and ¼ cup brown sugar and spread over the meatloaf before cooking.

Ingredients
5 Lbs. Lean Ground Beef
4 Eggs, Beaten
2 Package Of Stuffing Mix (such as Stove Top Brand)
3 Cloves Of Garlic
1 Teaspoon Liquid Smoke
¼ Cup Mustard
¼ Cup Ketchup
1 Teaspoon Salt
1 Teaspoon Ground Black Pepper
1 Teaspoon Dried Oregano
1 Teaspoon Dried Rosemary
1 Cup Water

Instructions
Combine all ingredients in a bowl until well combined.
Dump meat mixture into crock-pot and pat down evenly.
If using glaze, glaze your meatloaf with ketchup and brown sugar mixture.
Cover crock-pot with lid and cook on low for 6-8 hours.

Notes

Serve with your favorite side dishes. We enjoyed this with mashed potatoes and corn. Make meatloaf sandwiches or freeze leftovers for an extra meal or two.

Roasted pork loin with a homemade fig chutney sauce, along with some jasmine rice and fresh green beans. :drool:

Although I think I may back-burner that dinner in exchange for a steak dinner at Texas Roadhouse tonight. Come on out and support our Cub Scout den. :yay:
