Yummy Bruschetta

My cousin made this for gpop's birthday ... pretty kick-ass good for an appetizer. :yay:
4 boxes of grape tomatoes
3 cloves of garlic

fresh basil leaves
2 bags of finely grated mozarella cheese
2 tubes of grands crescent rolls or the big and flakey (grands has more calories so they taste better)
I use a big cookie sheet and roll out the crescents and bake.

The night before I dice by had all of the tomatoes, use a garlic press for the cloves of garlic, dice up the basil leaves, a splash of olive oil, splash of vinagar and a handfull of sugar.

She kept the tomato mixture in a bowl just until she was serving it; then she spread it on the baked sheet of crescent roll. You could cut it up into squares and put them on a plate for serving.

I still have to think about it for a moment whenever I see the phrase "hors d'oeuvres". Because if I don't, I intially pronounce it "Oar Day Vors". Then Nickel says, you tard! it's "oar derves"! Hahaha that's funny.

Preheat oven to 350 degrees F (175 degrees C). Place chicken breast halves on a medium baking sheet.

Bake in the preheated oven 20 minutes, or until no longer pink. Remove from heat, cool and shred.

Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, Cheddar cheese, green chile peppers and jalapeno pepper. Transfer the chicken mixture to a medium baking dish.

Bake uncovered in the preheated oven 30 minutes, or until the edges are golden brown.

I like to call them horses ovaries. But that's just me.

So which one of those chicken dip recipes is best? That appeals to me because:
  1. I can make it in the crockpot and won't have to bake it when I get there.
  2. We're picking crabs so a heavier appetizer will be appreciated.
  3. This is a dippy crowd - crab dip, artichoke dip, spinach dip. They'll like this.
  4. My MIL and SIL are excellent and creative cooks, but they've never brought anything like this and they'll want the recipe.

DJ, add some minced cooked crab and shrimp to the normal recipe. Some dijon, hot sauce, or old bay for a kick

I'm taking this to a party on Saturday. It's from Paula Deen's Food.tv show:

Crab Stuffed Mushrooms en Croute

1/2 cup herb flavored cheese (recommended: Boursin)
1/2 cup finely minced crabmeat (may use imitation)
18 uniform sized mushrooms, stem removed
1 box phyllo pastry (will need at least 18 sheets)
1/3 cup butter, melted
Salt and freshly ground pepper
1 egg, beaten

Preheat oven to 400 degrees F.
Combine cheese and crab in a small bowl. Divide crab mixture among the upside-down mushroom caps, stuffing the mushrooms. Carefully lay 6 sheets of phyllo dough on top of one another, brushing every other sheet with melted butter. Cut phyllo lengthwise down the center and then cut each half into 3 pieces to make 6 rectangles. Place a mushroom, cheese side up, in the center of each square. Season with salt and pepper. Lift sides of pastry over mushrooms to resemble small bundles and form a "neck," pinching edges together to seal. Repeat the entire procedure 2 more times.

Place on a greased baking sheet and brush with beaten egg. Bake for about 15 minutes until pastry is crisp and golden. Serve hot.

:popcorn: MMMM Hoverdovers, french for small and yummy. I love paula deen. The only party I'm hosting this month is for teeny boppers. I am making them pizza salad. (salad with all the vegies you find on a pizza, + pepperoni, motzarella cheese and broccoli and tri-collored pasta with a olive oil, ragu, itallian dressing.....dressing. :larry:
