Kim's Key Lime Pie

Key Lime Pie Recipe:

  • 1 14oz can sweetened condensed milk (not the fat-free crap)
  • 3 egg yolks
  • 1/2 cup of Nellie and Joe's Key Lime Juice (I got mine at Safeway and it MUST be key lime juice - regular lime juice will not do)
  • zest of 1 lime (key lime if you can get it, otherwise regular lime will do)
Mix yolks with cond. milk, then add lime juice and zest. Mix well and pour into a 9" graham cracker crust. Bake at 350 for 15 minutes. Cool, then refrigerate until chilled and set. Garnish with whipped cream.

Note that there is no jello, cream cheese or green food coloring in this recipe. True key lime pie is yellow and custardy, not green and cheesy/jello-y.

I think the coffee shop is the one who supplies the key lime pies around town. but i don't think that they are that good -- too acidic for me -- as well as over priced for size and quality.

Just to let you all know, there is a wonderful lil' coffee shop in Solomon's Island. They have great fresh coffee and a nice shop that sells candles and such. It is right by the water. The people there are wonderfully nice and they have a dog named Katrina, that was rescued from the hurricane.

You have got to be kidding me!!! Over-priced and so-so quality to suck in seasonal visitors!!! The cheesecakes are awful - and the key lime pie is average. Definitely not worth the prices!

REAL key lime pies are supposed to give you a bit of a zing. But to each his own - my Mom says that my Jello auntie makes the best key lime pie. :shrug:

It's not supposed to taste like a LIME pie, it's supposed to taste like a KEY LIME pie. :lmao: A good Key Lime pie bites you under your ears.

:barf: Use Vrai's recipe and you'll never go back. I use that same recipe to make lime pie with fresh limes. (no I don't call it key lime)

I made the lime last weekend, and put the meringue on it. Very yummy. I'm not into sweets, but the wife and kids snarfed it up with a quickness.

The recipe I used only has two eggs, but next time I think I'll use three for more volume and texture. Plus more meringue, which will please my daughter.
