Just sneakin' around....
Well, I'll call it a mild success. It's bacon, but very different that what you get in a store, more like ham. Much drier and not nearly as fatty, and the sugar in it can burn easily on the griddle making it hard to crisp. Much more chewy. This cut was very lean, so not much fat to begin with.

Next time: less sugar, more smoke flavor, salt is about right. And instead of baking it, just slice it and fry it as soon as it comes out of the curing bag.
