Question about steaming blue crabs

Strung Out
you are doing it wrong, Do it the Smith Island way, Rip the shell off, spray and clean out, put into pot top facing down, layering as you put them in,sprinkle with seasoning, Continue to add!!!! The absolute best way to eat crabs, work for sure but the BEST!!!! Putting them in like this does two things, gets the seasoning from water to get into crabs and also helps to drain the light crabs.

Wait. So, you take the shell off the crab before steaming??? Never heard of that.

yes they look done, your looking for ORANGE, no tint of green or blueish color....

you were taught how to pick a crab, but never learned how to cook them ??????

So there was no ER visit or talking to Porcelain God, they were cooked....

Smith Islanders do it that way, another Smith Island way is Stewed Jimmy's, Crabs cooked in a gravy, Good lord it's MESSY but good. They would use Heavy Jumbos !!!!

Would THIS face lie?
Usually when the apron releases itself from the shell on the bottom, they are done. I damn sure wouldn't eat em if they were not done..

Yes they did release that is why I thought they were done. However Like I said on the belly there was some blue areas still. So I was worried they may not have been fully done. We decided to toss the ones that didn't look done. Not worth getting sick. At least if I ever do cook them again I will do it correctly.

That's what I was thinking... Poor crabs... :frown: What kind of miserable hell do you come from, MADPEBS1 !?

how long do you think a crab suffers when you are steaming them? Rip the shell off and they are dead within 5 seconds or so... Steam, ya the ones on bottom probably pretty quick, those guys on top MINUTES of suffering ;-)))))

And a slow death from being steamed is any better? Crab ----> :hot:
Sometimes I have felt a little bad when they're clawing and fighting to get out of the pot.

I prefer not to buy them, but sometimes I do. If nobody buys them, they're just going to die. What's the point in that?

Supply and demand. If there is no demand, no need to supply. I believe Maryland restricted commercial crabbers last year, so they can't haul in as much. So that's a good thing.

They tightened things up a bit, based on type of commercial license you have. Many, if not most commercial crabbers can harvest and sell females though. Recreational crabbers are forbidden from taking any females at all.

The boat #2 son works on most every day is currently catching, per day, 14-18 bushels of 1s, a few bushels of 2s, and have not kept any females since early in the season. Other crabbers are not so selective..
