Rockfish recipes, anyone?

I am wondering what your favourite rockfish recipes are? Caught some beauties this morning and want to impress the missus...

No silly! Flour, Salt, Pepper, Beer Mix to the desired consistency and deep fry. :biggrin:

I like it blackened. I don't have a recipe b/c I have a friend who mixes the spices and gives me a jar of it, but look up blackened catfish recipes. You butter it, coat w/ seasonings then cook it on really high on the grill in iron skillets.

Guy I used to work with went out yesterday. Caught a 42 1/2", 38lb. Rock. What a monster!

My favorite is rockfish stuffed with crab imperial. Oakwood Lodge used to make a fantastic version of it.

melt a little butter, pour in baking dish. add fish. pour equal portions of white zin or (any white wine) & lemon juice over fish. (not a lot, just 1/3 thickness of fish) top with a sprinkle of old bay. YOU WILL impress the Mrs.
Then drink the rest of the wine! Everyone is happy. :biggrin:

I have had that. A friend of ours made it for us and you are right, it was very tasty! :yum:

I remember him splitting the fish in half, spreading the crab mixture in the center, and then broiling in the oven until flaky. It did not take long at all, and it was very rich and filling.

Geez ... that's pretty rude to offer up my house like that.

My mother will be in town that weekend, so I may not be able to accomodate unless I can talk her into doing a lot of the housecleaning, laundry, dusting, windows, floors, etc. for me while I play Julia Child. :biggrin:

Oh, and she'll have to play babysitter at the same time! :cheesy:

And I know your Mom. She'll watch kids, and help with almost anything ... but she'll point you in the direction of a housekeeper for the other problems.
