What is worong with vote being counted? None of what you said is illegal. Many jurisdictions allow mail in ballots to be counted up to 24 after the election presuming they were posted prior to the closure of the polls.

Because with in-person voting (along with voter ID checks) there is almost ZERO chance for fraud.
With mail-in ballots, that chance increases exponentially.

Most of us prefer a little inconvenience for a secure and unquestionable voting result over laziness and results that can be questioned.
