Thanksgiving Recipe

French Green Beans

3 tabls butter
2 16-oz cans French-style green beans, drained
1 teasp dried whole tarragon
1/4 teasp black pepper

Melt butter. Add remaining ingredients and bring to a boil. Reduce heat and simmer until hot.



Cranberry Relish

1 small Granny Smith apple, unpeeled, cored and quartered
1 naval orange, unpeeled and quartered
2 cp dried cranberries
1 8-oz can crushed pineapple, drained
1/3 cp sugar

Put apple, orange, and cranberries in food processor bowl, pulse until coarsely chopped. Pour into a bowl, stir in pineapple and sugar. Cover and chill at least 4 hours.


Savory Mashed Sweet Potatoes

4 sweet potatoes, peeled and cubed
2 medium purple onions, peeled and coarsely chopped
1/2 cp butter, cubed
1 teasp salt
1/2 teaspoon ground red pepper
2 tabls pure maple syrup, at room temp
1 tabls lemon juice
1 teasp cinnamon
1 teasp cumin

Combine first 3 ingredients in a lightly greased shallow 2-qt baking dish, sprinkle with salt and red pepper. Bake, covered, at 375* for 45 minutes or until potato is tender. Remove from oven. Add syrup and remaining ingredients; mash, leaving a bit lumpy.


Sweet Potatoes

4 sweet potaotes, peeled and cubed
3 tabls butter
1/4 cup water
1/3 cup pure maple syrup, at room temp
dash nutmeg

Combine first 3 ingredients in a lightly greased shallow 2-qt baking dish. Cover and bake for 45 minutes at 375*. Remove from oven and lightly mash. Add syrup and nutmeg, mixing well.

Used it ONCE ! Too messy requires a lot of Oil, then you have to dispose of oil . Oven is way to go 350 for 3 1/2 hours :whistle:

Guessing you didn't read.

Anyway I love my Big Easy. I use it for wings, ribs, whole chickens, potatoes, asparagus, chiken bacon rollups, stuffed chops, etc.

Turkey is OK in it, but don't go too big.

Anyone got a recipe for stuffing without the celery or onions, picky eater I'm trying to feed. I got potato bread cubed and turkey broth and every recipe I google calls for the onions and celery and my husband said NOTHING CRUNCHY, I could substitute onion powder I'm sure, but still need a recipe? anyone??:buddies:

Just pick any interesting stuffing recipe - or your favrite stuffing recipe - , and leave out the onion and celery.

Why make things more difficult than necessary?

Hmm, you could modify cornbread stuffing. In place of cornbread, use your bread and in place of chicken stock use your turkey stock. I know the recipe cause it used to be my responsibilty as a kid and it's in 2s. It's pretty forgiving and can be easily modified.

One cake of cornbread
2 tablespoons butter
2 eggs
2 cups chicken stock
2 tablespoons of sage
salt & pepper to taste

crumble cornbread and mix all together and bake at 350 for 30 minutes.


You can also add in cooked loose sausage - sausage wouldn't be crunchy or even add in two tins of oysters (sold with the sardines in the tuna fish section).

My mom always used Lipton onion soup mix in her stuffing - just followed the directions on the stuffing bag and added the soup mix to the water. The onions aren't crunchy at all but you get the depth of the flavor. I did it this way for years after I moved away from home, but over the years my taste has changed and it's now too salty for my taste.

Have you thought about adding some sage sausage (crumbled and browned) to the stuffing?

Also, if you sweat the onions and celery in a frying pan while you melt the butter, you can get them soft enough that they won't be crunchy. I'm not a fan of crunchy stuffing myself, so that's what I do - because I like the taste of the onions and celery.

OMG that all sounds good! How big of an army are you feeding?

We've really pared down the amount of food we'll have, but somehow I've wound up with a 20lb turkey for 4 people. Lots of leftovers in our future.

I expect to have about 35 people at our home, give or take a few people. But the best part is the Next Day Leftovers.

It doesn't matter. Some people say down makes it stay juicy, but I don't notice a difference. I go with up because it's easier to insert my meat thermometer.

I find it easier to insert my meat thermometer when her breasts are up too.
