Well, that was disappointing...

Didn't get my corned beef and cabbage this week, so I put some in the crock pot about 9am. figured it would be finished easily by 6pm.

Took the beef out, sliced it. It was like rubber. I'm all like WTH? I've never had a rubber corned beef. Put the cabbage on the plate with the other veggies, sit down to eat. Bit into a 'tater. WAY undercooked. ?? Carrots, cabbage... everything was undercooked. Well, that explains the rubber beef.

Tossed it all back in the crock and turned it to high. I'll try it again later.

Did you make enough for two? It sounds delicious. I should have done that. Made tacos. Very Irish I hear.

I had Irish salmon in a ginger soy marinade, plus kale (very green!) and a wedge salad (also green). Jerry's Place is YUM.
 
Today I got a hankering for my homemade pizza. We still have some homemade pizza sauce in the freezer too. :yum: I have no desire to make an Irish pizza by putting Irish food toppings on it so I think I will just dye the crust green instead and freak my family out....:clap:

Hmmm. For Christmas, you can color some red, some green, then braid them together.

I'd love to make it, but my daughter won't eat it and I'd end up wasting a bunch. Think I'll check the hot bar at the grocery store, they'll probably have it today and their food has always been really good.

I would absolutely make an Irish pizza. Crust, drizzled with Russian dressing, topped with sauerkraut, corned beef, and a combination of swiss and mozz cheese. Like a reuben pizza.

How long did it take in the crockpot? I put my cornedbeef, carrots, potato's in the crockpot at 9 this morning. The temp is on low. I've cooked it this way before, but cant remember how long I let it cook. I put the cabbage in the last 4 hours of cooking time. I couldnt find the recipe i used before, so kinda of playing it by ear.

My crock has 3 settings, low, med and high. I put it in at 9am on low. By 6pm it was still not fully cooked. Medium would have been better.

I usually put mine in the crock late, the night before on low. By about 1, or 2pm the next afternoon, it's done. When the Corned Beef shreds easily with a fork, VOILA..it's done. I forgot to mention, the next morning, I add the vegetables, and continue cooking on low.

YUM!!!

Never thought of sauerkraut as Irish before.
