I often chop a bit of mint into this salad. So refreshing!

happy to be living
I worked an estate sale Saturday and yesterday and today am working at the Chesapeake Marketplace. The husband has some ribs marinating for the smoker so I will be happy to come home today
Tomorrow, I will rest. Not used to working three days in a row :lmao:

What's his marinade? Always trying to make my ribs better. Mostly I just use a dry rub I found at a store.

Ribs were on sale at Weis, buy one get TWO free. I use a rub from Nicks of Calvert in Prince Frederick, using yellow mustard as a binder to make the rub stick.
For cooking, I employ the 3-2-1 method. We have a Traeger pellet smoker. Smoke on low for 3 hours, then wrap in foil for 2 hours @275, then sauce using Sweet Baby Ray’s and finish for 1 hour at @325.

In fact it’s time to put the ribs on. I prepped them last night, put the rub on then wrapped in Saran Wrap, this dissolves the rub and allows the spices to soak in overnight in the fridge, effectively marinating them.
Same process, dry rub in a vacuum bag in the fridge overnight. Just put mine on the smoker at 225*. After 2 hours, spray every 1/2 hour with apple juice. Should be ready by 5pm. Just straight smoking, tho, don't use the 3-2-1.

I threw together an impromptu picnic with a few of the neighbors. Doing smoked ribs and whatever they bring. Very casual, last minute.
Later today some of my neighbors are going to get together and sing patriotic songs.

On another note, my Uncle Bill was killed in action on Okinawa during World War II. I have his Purple Heart, some photographs and letters that he wrote to his family as well as letters received from a superior officer and a chaplain that were written to his wife. They were stored in boxes for decades in my grandmother's house, and later in my cousin's house for several more year's. I have had them for 10 or 15 years, all the while stored in boxes. I'm going to ask the remaining family members one more time if anyone wants them but even if one of them takes them my concern is that eventually it will all end up in the trash.

Do you guys know of any organizations, or even individuals, that collect and display WWII memorabilia?

I would shoot one of the museum curators at the Marine Corp Museum in Quantico,VA a letter or email and see what they might be interested in.

Chilling out. We hosted my mother and numerous other family and friends all weekend. Burgers and beers Friday evening, roasted a pig Saturday while we took 92-yo Mom up the river in a boat so she could raise a toast where we'd put my step-father's ashes overboard, steamed a half bushel of crabs and made up an awesome low-country shrimp boil yesterday. Everyone brought sides. Too much food, as usual.

Sent everyone packing this morning and I'm just chillin' now. This my "Dad's day"; my natural father was killed in a helicopter wreck and is interred in Arlington.
