Need some ideas and I cant be much help since I dont know what I want. Before you ask, hubby doesnt know what he wants either. Ideas are welcome.

I just made homemade baked, buffalo boneless chicken breast strips.

Cut your chicken breasts into thick strips. Dunk them in buffalo sauce then dunk them in crushed cracker coating. Spray with pam and place on foil lined cookie sheet. Bake at 375 until crispy on the outside and pure white on the inside.

I've started a pot of Chicken-Sausage Gumbo, with a loaf of French bread for dunking.

For dessert - Death By Chocolate cake!

3/4 cp sugar
1 cp flour
3 tables cocoa
2 teasp baking powder
1/4 teasp salt
1/2 cp milk
1/3 cp butter, melted
1 1/2 teasp vanilla
1/2 cp packed brown sugar
1/2 cp sugar
4 tables cocoa
1 1/4 cp hot water

Heat oven to 350*. Stir together 3/4 cp sugar, flour, 3 tables cocoa, baking powder, and salt. Stir in milk, butter, and vanilla; beat until smooth.

Pour batter into ungreased 9" square baking pan. Stir together brown sugar, 1/2 cp sugar, and 4 tables cocoa; sprinkle mixture evenly over batter. Pour hot water over top. Do not stir.

Bake 35 to 40 minutes until center is almost set. Let stand 15 minutes; spoon into dishes, spooning sauce from bottom of pan over top. Garnish with whipped cream and vanilla ice cream.

Had homemade jambalaya last week. The cake sounds delicious, how about I pay you to make me one. LOL, sounds like a lot of work.

I think we've settled on filet's with wilted spinach and risotto or basmati.
I'll make my flounder stuffed with spinach, mushrooms and feta tomorrow.

Thanks the suggestions everyone.:buddies:

Gonna grill some chicken that is currently marinating and have potato salad and greens with it. Gingerbread with whipped topping for dessert.

I made a pot of Chicken Corn soup. :yum: I had some yesterday for lunch at the Amish Market in Annapolis and as cold as it has been, this is just perfect for day like today.

Most of the recipes are similar, I read about 10 of them, but I used this one as my starting point, and altered it a bit. I cheated and used a rotisserie chicken from Safeway, because I wasn't home yesterday to roast a chicken, and used the leftover chicken I had from last week for the quesadillas last night. It's on the stove right now and smells really good! We won't even need bread, because it has rivels in it. It's really a one pot meal.

Surely you jest ...
In a perfect world a big stuffed pork chop, fried potatoes w/ onions and kale. In my world, soup or a danish, haven't decided yet. *shrug*

Everyone's meals sound so good! Great ideas for the upcoming week. Inspired! Tonight for us, though will be a seafood platter from one of our favorite waterfront restaurants.

This soup has been a prominent meal in our family for a VERY long time, so we eat it frequently. It is delicious!

this is abit late but you could make sambal chicken skewers.

1/2 cup (packed) light brown sugar
1/2 cup unseasoned rice vinegar
1/3 cup hot chili paste (such as sambal oelek)
1/4 cup fish sauce (such as nam pla or nuoc nam)
1/4 cup Sriracha
2 teaspoon finely grate

Preparation

Prepare grill for medium-high heat. Whisk brown sugar, vinegar, chili paste, fish sauce, Sriracha, and ginger in a large bowl. Add chicken and toss to coat. Thread 4 or 5 chicken pieces onto each skewer.

Transfer marinade to a small saucepan. Bring to a boil, reduce heat, and simmer until reduced by half (about 1 cup), 7–10 minutes.

Grill chicken, turning and basting often with reduced marinade, until cooked through, 8–10 minutes.
d peeled ginger

1 1/2 pounds skinless, boneless chicken thighs, cut into 1 1/2-inch–2-inch pieces.

To make it a whole meal I had roasted potatoes and stir fried bokchoy.

I would LOVE your recipe, if you would share it. This turned out very good, but I thought the Amish Market's was better. Foxhound said mine was as good or better.

I did some bone-in thick cut chops this week. Put them in a glass dish with sauerkraut, onions, apples and covered with chicken/mushroom soup. Baked covered for 1:15. Always comes out tender and moist.
