Baked butternut squash with some butter and maple bacon onion jam.

I cut it in half, scraped out seeds and scored it a little with a knife (not the skin). Put a few pats of butter on it and put it in the air fryer to bake until it got soft (at 350 for maybe a total of 18-20 min or so). Pulled it out and spooned some of the jam on it.

My wife is very imaginative especially when it comes to keeping me on a diet.

Two of my favorites of hers - one was last night. It's bunless Big Mac - a salad with hamburger, shredded cheese, pickles and secret sauce (which I am guessing is thousand island). The other is wrapless egg rolls - same idea. Seasoned ground pork and cabbage and onions, served as a salad.

Black eyed peas are like Brussel sprouts, I really should like them. I like every other version of beans and cabbage, but these two I just can’t find a way to like.

When we were in OKC I had a bacon cheeseburger salad and it was one of the best things I've ever eaten, no kidding. They dressed it with Ranch because Thousand Island gags me out.

We had a mid winter fried seafood feast at my daughter's house. I supplied the crab cakes, perch filets, and oysters. Son's girl brought shimp/pasta salad.

Sorry your family doesn't like it, because it came out really well! One pot and one pan, so not much mess. I have enough for several more days. I used solid white albacore and it doesn't stink either!

Arbys roast beef sandwich, it was a huge disappointment. Used to love their roast beef, now it’s worse than I imagine dollar store roast beef would be.
